Job Title: Pasta Production Manager

Job Overview:

As a Pasta Production Manager you will be responsible for the creation of high-quality, handmade pasta products for our customers. Your primary role involves combining raw ingredients to produce various types of pasta, ensuring consistency, taste, and adherence to established recipes. This position requires a keen attention to detail, strong culinary skills, and a passion for delivering exceptional food products.

Responsibilities:

  1. Pasta Preparation:

    • Measure and mix ingredients to create pasta dough following specified recipes.
    • Operate pasta-making equipment, such as pasta machines and extruders, to produce a variety of pasta shapes and sizes.
    • Ensure the quality and consistency of pasta products through careful monitoring of ingredients and production processes.
  2. Quality Control:

    • Inspect raw materials for freshness and quality.
    • Conduct regular quality tests and visual inspections to maintain product quality standards.
  3. Cleanliness and Sanitation:

    • Maintain a clean and organized workspace, including regular cleaning of equipment and utensils.
    • Follow hygiene and safety standards to ensure a sanitary food production environment.
  4. Recipe Development:

    • Collaborate with the culinary team to develop new pasta recipes and variations.
    • Experiment with different ingredients and techniques to enhance product offerings.
  5. Production Planning:

    • Work with the production team to plan daily and weekly pasta production schedules.
    • Communicate with management regarding inventory levels and ingredient needs.
  6. Team Collaboration:

    • Collaborate with other kitchen staff to coordinate the timing of pasta production with other menu items.
    • Communicate effectively with team members to ensure a smooth workflow.

Requirements:

  • Proven experience as a production manager or similar role in a professional kitchen managing daily tasks and managing 2-4 team members.
  • Knowledge of different pasta types, cooking times, and flavor profiles.
  • Strong attention to detail and ability to follow precise recipes.
  • Physical stamina and ability to stand for extended periods.
  • Creativity and willingness to contribute to recipe development.
  • Knowledge of food safety and sanitation practices.
  • Strong communication and teamwork skills.

Preferred Qualifications:

  • Culinary school education or relevant certifications.
  • Familiarity with Italian cuisine and pasta-making traditions.
  • Experience with various pasta-making equipment and tools.

Working Conditions:

This role is in a commercial kitchen environment. The position involves working early morning to early evenings.
