If so, you're in for a treat! il Buco Alimentaria & Vineria, a renowned 3-star restaurant featured in the New York Times, is looking for a baker to join their esteemed Bakery Department. This unique establishment takes pride in its naturally leavened products and emphasizes the use of organic and locally sourced ingredients.
Working alongside the head baker, the Alimentari & Vineria Bakers prepare and bake various breads, pastries, cakes, and other baked goods, ensuring quality and freshness and maintaining a clean and safe work environment.
If you have an organic understanding of rustic breads, fermentation, and laminated doughs ( breads of all types, croissants, rye, etc.) and are looking to gain practical skills, this is an excellent opportunity to:
- Demonstrates understanding of bread, including components and fermentation.
- Responsibilities Include: mixing dough, managing fermentation, scaling and shaping, baking
- Serve as a reference point for the bakery team for questions on recipes, food specifics, and food quality
- Ensure the facility meets NYC DOH compliance
- Hold themselves accountable for health code regulations
- Manage the kitchen facility by maintaining equipment in the kitchen and ensuring a clean and organized workspace: Operate and maintain baking equipment, such as ovens, mixers, and proofers. Clean and sanitize baking equipment and work areas according to established procedures. Follow safety procedures when operating and maintaining equipment.
- Monitor and uphold food quality and presentation
- Maintain all recipe books
- Assist with tracking food waste
- Coordinates with Head Baker to ensure pleasant work environment
- Able to work with a team to ensure efficient production and timely delivery of baked goods
- Demonstrates a willingness to perform occasional small duties to aid other departments and a general understanding of the restaurant as a whole and willingness to support the entire entity
Required Qualifications
- Minimum three years of Baking experience in a high volume, upscale to fine dining restaurant
- Valid Food Handler’s Certification for NYC Department of Health preferred
- Expert at equipment handling and maintenance
- Team-focused mindset and empathetic approach to collaboration
- A positive and enthusiastic attitude, as well as a desire to learn, grow, and develop
- Excellent communication, organizational, and interpersonal skills
- Ability to remain calm under pressure
- Willing to accept guidance in a positive manner and implement the direction in a way that is productive for both you and the team
- Ability to demonstrate quick thinking and adaptability in a constantly changing environment
- Must have open availability: Early AM, morning, Nights, Weekends and Holidays
Physical Demands
- The physical demands for this position are seeing, hearing, speaking, reaching, frequently lifting up to 25 pounds, occasionally lifting up to 50 pounds, standing, bending for 4 to 8 hours, and moving intermittently during working hours.

Compensation Details
Compensation: Hourly ($20.00 - $22.00)
