Chef John Fraser is seeking an experienced, passionate, and service-driven Sous Chef to join our esteemed culinary team at The Wall Street Hotel. This is a unique opportunity to grow within an award-winning restaurant group, working alongside industry-leading professionals in a high-volume, fine dining setting.
As a Sous Chef, you will play a pivotal role in executing exceptional cuisine, mentoring kitchen staff, and ensuring operational excellence. We are looking for a detail-oriented and team-focused leader who thrives in a fast-paced, disciplined kitchen environment and is eager to contribute to a culture of culinary excellence.
Key Responsibilities:
- Culinary Excellence: Execute and maintain the highest standards in food preparation, cooking, and presentation.
- Leadership & Mentorship: Guide and inspire junior kitchen staff, fostering a culture of growth and teamwork.
- Operational Efficiency: Oversee mise-en-place, kitchen organization, and food storage, ensuring consistency and quality.
- Kitchen Systems & Technology: Utilize various kitchen technologies to enhance efficiency and maintain consistency.
- Quality Control & Inventory Management: Monitor product quality, communicate inventory needs, and proactively address operational challenges.
- Cleanliness & Organization: Maintain an immaculate and systematized work environment, ensuring food safety and sanitation standards are upheld.
- Adaptability & Growth: Accept and implement constructive feedback while continuously identifying areas for improvement.
What We’re Looking For:
- Experience: Prior managerial experience in a professional kitchen, ideally in fine dining or high-volume hospitality.
- Leadership Skills: Ability to effectively mentor, motivate, and develop kitchen staff.
- Attention to Detail: Commitment to excellence, organization, and high operational standards.
- Efficiency & Urgency: Works with purpose and focus in a fast-paced environment.
- Food Safety Knowledge: NYC Food Protection Certificate is required.
