Loreto is looking for a Full-Time Jr. Sous Chef to join the team! We’re an upscale-casual Mexican seafood restaurant that specializes in seafood dishes inspired by the fresh ingredients from the Baja coast. We are a full bar restaurant with specialty cocktails and a curated wine selection. Mariscos Za Za Zá is our counter-service lunch concept at the same location. Jr. Sous Chef availability must be fully open for five-day work week.
Responsibilities:
- Lead and support under Sous Chef with dinner and lunch service.
- Lead and support AM team under Sous Chefs to prepare and cook foods according to menu and any special/seasonal items as needed.
- Support Sous Chef with day-to-day staffing requirements, including planning, assigning work, establishing performance and development goals for the team.
- Ensure quality and health standards are properly maintained throughout the preparation of all restaurant food.
- Educate and train all team members in compliance with company and food safety protocols.
- Support with inventory management including ordering and receiving kitchen products.
- Check the quality of raw and cooked food products to ensure that standards are met.
- Support with BOH positions as needed
- Ensure security and proper storage of food, beverage, inventory, and equipment and replenish supplies in a timely manner while minimizing waste.
- Fill out and monitor AM list for kitchen operations.
- Fill out and monitor PM/closing list for kitchen operations.
- Light administrative duties such as invoice scanning, inventory list, and opening closing list.
- Alert management team of necessary repairs and maintenance.
Qualifications:
- Valid food handler certificate preferred
- 2+ years experience working in high volume kitchen preferred
- Experience working as a Lead Cook or Jr Sous Chef preferred
- Be comfortable with repetitive motions such as walking, bending and standing during your scheduled shift.
- Be able to lift and carry at least 50 pounds.
Compensation:
- $20 - $24 hourly rate depending on experience
- Estimated additional tips around $30-60+ a week. Tip amounts are not guaranteed and are dependent on hours worked and daily business.

Compensation: Hourly ($20.00 - $24.00) plus tips
