About Fresco by Scotto:
Fresco by Scotto is a premier Italian dining destination in New York City, renowned for its upscale ambiance, authentic cuisine, and high-energy atmosphere. It is a family-owned and operated affair for over three decades, with Rosanna Scotto and her children Jenna Ruggiero and LJ Ruggiero as current ownership.
We are seeking a dynamic and innovative Executive Chef to lead our kitchen with creativity, precision, and a passion for excellence. The ideal candidate will have experience managing a high-volume, fine-dining kitchen while inspiring both front and back-of-house teams.
Job Responsibilities:
Menu Development:
- Develop and execute innovative, seasonally inspired, holiday & private event menus that balance creativity with customer preferences and industry trends.
- Create and refine daily specials while maintaining the integrity of Fresco by Scotto’s signature dishes.
- Stay current with culinary trends and incorporate fresh, innovative ideas into our offerings.
Kitchen Operations & Cost Management:
- Oversee all kitchen operations, including inventory management, ordering, and cost control to maximize efficiency and profitability.
- Implement and manage XtraChef software and integrate inventory management within Toast (training available if needed).
- Maintain rigorous attention to portion control, waste reduction, and ingredient sourcing to optimize kitchen performance.
- Maintain in-house recipes with financial cost values
- Foster a culture of teamwork, accountability, and continuous learning.
- Lead by example, inspiring and motivating both the back-of-house and front of the house teams to deliver exceptional guest experiences.
- Maintain consistency in execution and uphold the restaurant’s reputation for excellence.
Food Safety & Compliance:
- Establish and enforce best-in-class food safety and sanitation practices in full compliance with Department of Health regulations.
- Ensure all kitchen staff are trained in proper food handling and safety procedures.
- Maintain a clean, organized, and efficient kitchen environment at all times.
Hours of Operation:
- Monday-Friday: Lunch 12:00 PM – 3:30 PM | Dinner 5:00 PM – 10:00 PM
- Saturday: Dinner 5:00 PM – 10:00 PM
- Sunday: Closed
Compensation & Benefits:

Qualifications & Experience:
- Minimum of 3-5 years of experience as an Executive Chef or Sous Chef in a high-volume, fine-dining restaurant.
- Full knowledge of recipe cost values, P&L, & DOH requirements
- Proven leadership skills with the ability to manage and inspire a diverse kitchen team.
- Deep understanding of Italian cuisine, seasonal ingredients, and contemporary culinary trends.
- Exceptional organizational and multitasking abilities.
- Strong knowledge of food safety regulations; ServSafe certification or Food Handler’s License required.
- Proficiency in kitchen management software is a plus.

Compensation: Salary ($100,000.00 - $275,000.00)
