New York City's esteemed La Grande Boucherie has recently opened in Miami!
We are seeking an experienced, professional, hard-working PM Butcher who is excited to join us in our growth. We are seeking individuals who have experience in a high-volume and fast-paced restaurant and are committed to providing an exceptional dining experience to our guests!

The 
Butcher is responsible for preparing, trimming, and slicing meats in accordance to restaurant recipes and standards. The Butcher is to properly store, weigh, and label meat after it is processed, and ensure a safe work environment.

*PM hours

Responsibilities:

  • Cleans, cuts, weighs, packages and labels meat in accordance with restaurant’s high-quality standards
  • Maintain appropriate portion-control
  • Control and limit waste
  • Complete shift work (prep, opening and closing checklists), as assigned, timely and thoroughly in accordance with restaurant standards
  • Clean and stock station as assigned, by the start of each shift
  • Maintain and clean equipment, and conduct regular cleaning and routine repairs, including sharpening knives and saws, as assigned, thoroughly and in a timely fashion
  • Maintain proper storing temperatures according to DOH regulations
  • Follow proper rotation procedures according to DOH regulations
  • Inspect meat prior to processing to ensure correct quantities and maintain a high level of product quality
  • Maintain records of meat inventories and on-hand supplies per restaurant recipe needs
  • Updates knowledge and skills by participating in staff training opportunities
  • Maintains sanitation to Department of Health standards; Keep work area clean and organized

Requirements:
- 2+ years of proven cooking experience as a Butcher for a similar caliber concept
- Excellent understanding of various cooking methods, ingredients, equipment, and procedures
- Ability to work on your feet for eight hours or more a day
- Must be able to lift 30-50 pounds at a time, on a regular basis
- Accuracy and speed in executing assigned tasks
- High level of professionalism
- Comfortable working with a team in a high volume and fast-paced kitchen environment
- Excellent verbal communication and organization skills
- Familiar with the DC industry’s standards and best practices
