Storied French luxury department store, Printemps, is preparing to open its first ever US location at One Wall Street in the heart of the Financial District.

Located in the historic 50-story landmark, Printemps will have five distinct food and beverage concepts ranging from a casual cafe to a fine dining restaurant. Food and beverage is helmed by Top Chef alumnus and 3-time James Beard

Award Winner, Chef Gregory Gourdet.

Description:

We are looking for hard-working and detail oriented Prep Cooks for full-time employment. 

You and your fellow prep cooks will be responsible for owning raw ingredients within the restaurant. 


Duties include but are not limited to chopping vegetables, breaking down, cutting or grinding meat, weighing and mixing ingredients, washing and preparing vegetables, and storing food. Most importantly, you should have a warm, positive and appreciative demeanor. 


You Should Be:

  • Bright; animated; lively; cheerful; vivid or brilliant
  • Spirited: having or showing mettle, courage, vigor, liveliness, etc.
  • Reliable: that may be relied on or trusted; dependable in achievement, accuracy, honesty, etc.

Characteristics of success:

  • Possess advanced knife skills
  • Assist receiver with properly receiving, storing, and rotating food products
  • Maintain a thorough understanding of vegetable fabrication
  • Have a working understanding of sanitation codes and regulations
  • Ensure HACCP is being used correctly in the kitchen
  • Be able to accurately portion ingredients and proteins
  • Be able to assist with the preparation of Family Meal as needed
  • Maintain the kitchen by sanitizing prep areas before and after use and making sure that all knives and critical equipment are properly cleaned after use
  • Be able to stand for long periods of time
  • Be able to lift up to 50 pounds 
  • Be able to receive, organize, and properly store raw ingredients
  • Be able to closely follow directions
  • Clock in for your shift (after you have changed into your uniform)
  • Be on duty and in uniform at scheduled time
  • Closely follow the direction of chefs
  • Have all mise en place prepared on time as requested
  • Receive and check in all protein that is delivered. Ensure to communicate with Kitchen manager about any returns that need to take place
  • F.I.F.O. all proteins properly
  • Clean  shellfish 
  • Maintain station cleanliness
  • Ensure to take proper breaks and clock in and out accordingly 
  • Clock out for your shift (before you have changed out of your uniform)

Preferred Education and Experience:

  • Ability to communicate in English preferred
  • GED or equivalent level of education preferred
