AM Cook Job Description – Pastis, Miami

Position Overview:
Pastis Miami, a STARR Restaurant and renowned French-inspired brasserie, is seeking a passionate and dedicated AM Cook to join our dynamic culinary team. The ideal candidate is a morning person with a strong work ethic, culinary skills, and a desire to create exceptional dining experiences. This role involves preparing high-quality dishes, maintaining kitchen efficiency, and upholding our commitment to excellence in food preparation and presentation.

Key Responsibilities:

  • Prepare and cook breakfast and lunch menu items in accordance with restaurant recipes and standards.
  • Ensure all food is prepared in a timely manner, maintaining high quality and presentation.
  • Set up, stock, and maintain workstations with all necessary supplies for daily operations.
  • Assist with daily prep tasks, including chopping, slicing, and other food preparation duties.
  • Adhere to food safety and sanitation guidelines, ensuring a clean and organized kitchen.
  • Collaborate with the culinary team to execute menu changes and special requests.
  • Monitor food inventory and communicate supply needs to the kitchen manager.
  • Follow direction from the Chef and kitchen leadership team to maintain consistency and efficiency.

Qualifications:

  • 2-3 years experience as a line or prep cook in a high-volume kitchen is required.
  • Strong understanding of cooking techniques, kitchen equipment, and food preparation.
  • Ability to work efficiently under pressure in a fast-paced environment.
  • Attention to detail and a passion for delivering high-quality dishes.
  • Availability for early morning shifts, weekends, and holidays.
  • Must be a team player with excellent communication and organizational skills.

New York City’s quintessential Parisian-style brasserie, Pastis, has made its debut in Miami’s bustling colorful Wynwood neighborhood this April. The critically acclaimed restaurant that anchored Manhattan’s Meatpacking District for nearly 15 years became a beloved institution.

The expansive 8,000 square foot restaurant, inclusive of a stunning outdoor space with an enclosed pergola, adorned by black locust, will welcome guests to enjoy exceptional French fare no matter the weather. The interior includes many design elements that the original location is known and loved for, such as a curved zinc bar, white subway tiles, red banquettes, vintage mirrors with handwritten daily specials, and mosaic-tiled floors.
