As we continue to grow, Colwen Hotels is searching for a high-energy culinarian to fill the role of regional task force sous chef to primarily support our hotels located throughout the greater Boston region.  This is a dynamic full-time position supporting multiple culinary teams and a variety of brands.  Your culinary talent, leadership, flexibility, business acumen, and enthusiasm will all play a critical role in being a successful candidate.  We are a culture of dedicated team players looking for people who contribute to that positive ‘can do’ approach every day and everywhere they work.  Our ideal candidate is an experienced natural leader who is comfortable walking into a new environment, identifying what needs to get done, and then doing it.   This is a roll-up-your-sleeves working Sous Chef position.  This is an opportunity to gain a tremendous amount of experience in a short period of time.

Responsibilities Include But Not Limited To The Following:

  • Travels to assigned properties and is responsible for long and short-term planning and day-to-day operations of the kitchen and related areas.
  • Plans and manages the procurement, preparation, and presentation of all food in the hotel in a safe, sanitary, cost-effective manner.
  • Monitors and controls the maintenance/sanitation of kitchen, equipment and related areas to ensure a healthy, safe work environment that meets/exceeds federal, state, corporate and franchise standards and regulations.
  • Assists the Executive Chef and or Hotel Management in overall kitchen operations ensuring maximum guest satisfaction
  • Assists in the planning, organizing, directing and control of the kitchen operation and administration
  • Oversees and enforces food specifications, portion control, recipes and sanitation
  • Works the kitchen line
  • Assists the Executive Chef and or Hotel Management in hiring, training, supervising and scheduling associates
  • Documents and trains staff on new menu items/creates use records based on recipes
  • Prepares, cooks and presents food in accordance with productivity standards, cost controls and forecast
  • Continuous analysis of labor and food costs to meet/exceed budget
  • Orders food as needed or as directed by Executive Chef and or Hotel Management
  • Preparation of food as per Banquet Event Orders (BEO)
  • Schedules and receives food deliveries, and check deliveries for product quality and quantity
  • Ensures that received food products are high quality, stored properly, and are rotated FIFO
  • Attends all hotel meetings as required
  • Performs other duties as assigned

Requirements:

  • 5+ years of culinary experience in restaurants and or hotels
  • Prior culinary education and training is desirable
  • Excellent verbal and written communication skills
  • Solid organizational and time management abilities
  • Willingness to work a schedule including nights, weekends, and holidays
