Responsibilities:

  • Elevate Guest Experience: Cultivate an atmosphere of exceptional service by training staff to deliver personalized and attentive hospitality, ensuring every guest feels valued and appreciated.
  • Operational Excellence: Oversee all aspects of daily operations, including service flow, table management, and event coordination, to maintain the highest standards of quality and efficiency.
  • Team Leadership: Build and mentor a high-performing team, fostering a culture of professionalism and collaboration through regular training and performance feedback.
  • Financial Stewardship: Manage the restaurant’s financial performance by overseeing budgeting, forecasting, and cost control measures, ensuring profitability while maintaining quality standards.
  • Quality Assurance: Implement and uphold rigorous service and culinary standards, conducting regular evaluations to ensure consistency and excellence in all offerings.

Qualifications:

  • Extensive Management Experience: A minimum of 5 years in a management role within a fine dining establishment, demonstrating a track record of success in leading high-performing teams.
  • Proven Leadership Skills: Exceptional ability to inspire and develop a diverse team, with experience managing 25 or more employees in a fast-paced environment.
  • Expert Knowledge of Fine Dining Operations: Deep understanding of service techniques, dining room management, and the nuances of creating a premier guest experience.
  • Culinary Insight: Strong knowledge of food and beverage offerings, including expertise in wine and spirits, to enhance guest interactions and service quality.
  • Financial Acumen: Proficient in financial management, including P&L analysis, budgeting, and cost control, with a proven ability to drive profitability while maintaining quality standards.
  • Strategic Thinker: Demonstrated ability to set and achieve performance goals, with experience developing and executing operational strategies in alignment with business objectives.

After citing morels as his favorite food in an interview, chef Tom Colicchio, then at the helm of Gramercy Tavern, got to thinking — Where can you go to eat just mushrooms, or order a bowl of sweet, tender peas when they’re at their best in early spring?

The idea of Craft evolved from there. This would be a restaurant that mimicked the experience of dining in someone’s home – simply prepared dishes highlighting pristine, seasonal ingredients served family-style; guests building their own plates from dishes brought to the center of the table.
