Barbuto, the West Village dining landmark created by Chef Jonathan Waxman, is seeking a Sous Chef to join our leadership team. Known for ingredient-driven, Italian-inspired cooking, Barbuto celebrates simplicity, seasonality, and craft. This role is an opportunity to grow as a leader in one of NYC’s most respected kitchens.

Responsibilities
- Support the CDC in leading day-to-day kitchen operations.
- Oversee mise en place, service, and cleanliness across all stations.
- Train, mentor, and motivate cooks — leading by example.
- Uphold Barbuto’s plating standards: vibrant, seasonal, ingredient-driven.
- Assist with ordering, inventory, scheduling, and vendor relationships.
- Step into CDC responsibilities when needed, ensuring smooth, consistent execution.
What We’re Looking For
- 4+ years of professional kitchen experience, including prior leadership (lead line or sous).
- Strong cooking background, ideally with pasta and wood-fired grill experience.
- Ability to lead calmly under pressure and maintain a positive, team-first culture.
- Passion for Italian flavors, seasonality, and building a career in leadership.
- Organizational skills and a drive for consistency and excellence.
Compensation Details
Compensation: Salary ($65,000.00 - $75,000.00)

The West Village restaurant Barbuto has been a neighborhood gathering spot welcoming locals and visitors alike for over 15 years. Barbuto first opened its doors in February 2004 in its original location at Washington & Jane Streets, where it was truly a staple. After reopening in October 2021, the restaurant is well on its way to earning that status again in its new home at 113 Horatio Street at West Street, a mere three hundred steps from the original.
The name means “bearded” in Italian. When developing the concept, Jonathan and his business partner at the time Fabrizio Ferri both sported beards; so did Fabrizio’s Irish Wolfhound Gideon, who is immortalized in the logo. It just made sense.
At its heart, Barbuto is a casual restaurant offering Chef Jonathan Waxman’s celebrated Californian-Italian cuisine that is simple & seasonal.
