About Us
Baroo is a modern Korean tasting menu restaurant in the Arts District of downtown Los Angeles. We are run by husband-and-wife team, chef Kwang Uh and Mina Park. We have been fortunate to be selected by the LA Times as Restaurant of the Year 2024, among other accolades. We are currently looking for a Sous Chef to work hand-in-hand with Executive Chef Kwang Uh.
Description
The Sous Chef plays a key role in supporting the Executive Chef in the daily operations of the restaurant. This position is integral to the management of our culinary team and to realizing the restaurant's vision and standards. Strong communication and organizational skills are essential, as are a commitment to excellence and a positive, enthusiastic, energetic attitude.
Responsibilities
- Collaboration on Menu Development: Work alongside the Executive Chef and R&D Chef for menu research and development, ensuring alignment with baroo's culinary voice.
- Act as Primary Supervisor: Step in as the primary kitchen supervisor in the absence of Executive Chef, ensuring seamless operations.
- Leadership of Chefs de Partie: Guide and support CDPs in food production and kitchen setup, fostering a cohesive and positive team environment.
- Food Production Oversight: Maintain high standards for food production and quality control, ensuring consistency in every dish served.
- Compliance with Health Standards: Ensure adherence to Department of Health protocols, providing training and oversight to kitchen staff.
- Cost Management: Collaborate with the Executive Chef to ensure accurate costing of menu items and standardization of recipes to maintain profitability.
- Daily Kitchen Maintenance Oversight: Assist in overseeing daily maintenance of kitchen equipment and cleanliness to ensure a safe and efficient workspace.
Qualifications
- 3+ years of experience in a fine dining or Michelin-star restaurant.
- 2+ years in a management or leadership role.
- Strong oral, written, and interpersonal communication skills.
- Food Safety Handling Certification.
- Must be able to demonstrate an extensive knowledge of (and desire to continue learning) all aspects of cooking, including: sourcing of ingredients, methods of preparation, cooking techniques, etc.
- Strong computer skills, including proficiency in Microsoft Office and Google Workspace.
- Capability to mentor and develop the kitchen team and maintain a positive workplace environment.
- Knowledge and/or experience with Korean cuisine is a plus but not required
Physical Requirements:
- Ability to lift up to 25lbs if necessary
- Safely and effectively use all necessary tools and equipment
- Stand and walk for an entire shift, including moving safely through all areas of the restaurant
