Position Overview:
We are seeking a highly skilled, driven, and ambitious Executive Chef to take the reins of our kitchen. The ideal candidate will possess a deep knowledge of seafood and contemporary culinary techniques, with the ability to create inspiring, refined dishes that align with our restaurant's premium brand. This role demands creativity, leadership, and a strong commitment to quality, while also fostering a collaborative team environment.

Key Responsibilities:

  • Menu Development: Curate and continually evolve the menu, showcasing the finest seasonal and locally sourced seafood. Create innovative dishes that surprise and delight our guests, while staying true to the restaurant's upscale coastal concept.

  • Leadership & Team Management: Lead, mentor, and motivate a dedicated culinary team. Provide guidance on both technical and creative aspects of cooking, ensuring high standards of performance, hygiene, and kitchen organization.

  • Quality Control: Ensure the consistent preparation of dishes to the highest quality, paying meticulous attention to flavor, presentation, and freshness. Work closely with the front-of-house to ensure seamless service and guest satisfaction.

  • Sustainability & Sourcing: Oversee sourcing of ingredients, maintaining a focus on building relationships with local purveyors.

  • Cost Management: Manage kitchen budgets, including food costs, labor, and inventory, optimizing efficiency without compromising on quality. Work with the management team to ensure financial goals are met.

  • Collaboration: Partner with the front-of-house team to ensure exceptional guest experiences, collaborating on specials, events, and seasonal promotions.

  • Training & Development: Foster a culture of continuous learning and improvement, offering training in new techniques and kitchen best practices. Inspire a team committed to excellence and personal growth.

Key Qualifications:

  • Experience: Minimum of 2-3 years of experience in high-end restaurants, with at least 1 year in a leadership role. Proven track record in seafood-focused cuisine is highly preferred.

  • Culinary Expertise: In-depth knowledge of modern culinary techniques, particularly seafood preparation and presentation. A passion for fine dining, creativity, and flavor innovation is essential.

  • Leadership & Communication: Strong leadership skills with the ability to build and maintain a motivated and efficient kitchen team. Excellent communication and interpersonal skills to work closely with both kitchen and front-of-house staff.

  • Ambition & Drive: Eagerness to push boundaries in the kitchen, constantly striving for excellence and willing to embrace new challenges. A creative mindset and willingness to evolve and experiment with new culinary trends.

  • Organization & Efficiency: Exceptional organizational skills with a keen ability to manage time and resources effectively in a fast-paced environment. Strong attention to detail and a focus on cleanliness and food safety.

  • Passion for Seafood: A deep appreciation for high-quality, sustainable seafood and a commitment to showcasing its best attributes in every dish.

Preferred Qualifications:

  • Degree from a recognized culinary school or equivalent experience.
  • Knowledge of wine pairings and menu design to complement seafood dishes.

At FISHBAR we specialize in mesquite grilled fish, king crab, Maine lobster, shrimp, scallops & oysters - just to name a few. We pride ourselves on delivering the absolute freshest seafood available. All of our fish is flown in daily from around the world. Our seafood is hand picked specifically for our guest. We have a very high standard for our products and consider ourselves “fanatical about freshness!” We purchase our fish whole and have a Master Filleter do all the cutting. Our fish never spend more than 24 hours in our restaurant - it comes in and goes out the same day.
