About Us:

Realmuto Alta Pasticceria is an independent, locally owned bakery with multiple locations, including our flagship in the West Village. We specialize in crafting traditional Italian pastries and sweets, and we’re looking to bring on a dedicated and experienced Pastry Chef to join our growing team. Our ideal candidate will be passionate about pastry, highly organized, and eager to contribute to the growth of our bakery.

Position Overview:
We are seeking a full-time Pastry Chef to oversee the production and daily operations of our pastry department. This is an exciting opportunity for a creative and skilled professional who is looking to bring their expertise to a vibrant bakery. You will work closely with the Executive Pastry Chef, General Manager, and ownership to create high-quality baked goods, maintain high standards of cleanliness, and support our mission to offer exceptional products to our customers.

Key Responsibilities:

  • Pastry Production & Quality Control: Oversee the production of all bakery items, ensuring that all products—whether for daily sales, special orders, or events—are prepared and baked to the highest standards.
  • Recipe Development & Innovation: Create, test, and refine recipes for seasonal and holiday items. Continuously develop new offerings while maintaining the integrity of traditional Italian pastry techniques.
  • Inventory & Par Levels: Set daily pars for all items, including cakes, fillings, frostings, and pastry creams, ensuring consistent product availability and quality.
  • Sanitation & Safety: Uphold strict sanitation protocols in line with NYC Department of Health standards. Ensure the pastry kitchen, storage areas, and front-of-house (FOH) areas are maintained to the highest level of cleanliness and food safety.
  • Team Leadership & Training: Supervise and train pastry team members, ensuring they adhere to best practices in food handling and kitchen organization. Foster a collaborative and efficient team environment.
  • Production Efficiency: Implement systems and processes to maximize efficiency, minimize waste, and streamline production workflows.
  • Event & Special Order Coordination: Work with management to plan and execute special orders and events, ensuring timely preparation and delivery of custom products.
  • Equipment Maintenance: Ensure all pastry equipment is well-maintained and in good working order. Coordinate with the team to maintain the cleanliness and functionality of all kitchen equipment.

Qualifications:

  • Proven experience working as a Pastry Chef or in a similar role, with a focus on Italian pastries, croissants, donuts, bread, and other baked goods.
  • Ability to work in a high-volume production environment while maintaining a focus on quality and consistency.
  • Strong knowledge of baking techniques, ingredient sourcing, and pastry methods, with a passion for learning and staying up-to-date on industry trends.
  • Demonstrated ability to manage multiple tasks in a fast-paced environment, prioritizing efficiently without compromising quality.
  • NYC Department of Health Food Protection Certification (or the ability to obtain one).
  • Excellent organizational and communication skills with the ability to work collaboratively with a team.
  • A strong work ethic, attention to detail, and a commitment to upholding the highest standards of product quality and sanitation.
