Position: Chef de Partie

Open: Lunch and Dinner 

Location: Hudson Yards, NYC
Papa San, the innovative new izakaya Peruvian restaurant from the acclaimed Llama Inn group, is looking for a passionate Chef de Partie to join our dynamic kitchen team. This is an exciting opportunity to be part of a groundbreaking culinary concept that beautifully merges Japanese and Peruvian flavors.

About Us:
At Papa San, we celebrate the art of fusion cuisine. Our menu features dishes like:
- Nikkei Ceviche: Fresh fish marinated with aji amarillo and yuzu.
- Miso-Glazed Grilled Chicken: Tender chicken with a miso marinade served with Peruvian-style sides.
- Sushi Rolls: Unique combinations featuring Peruvian ingredients such as avocado and rocoto.

Key Responsibilities:
- Food Preparation:

- Prepare and cook high-quality dishes in your designated section, ensuring all items are executed to the highest standards of taste and presentation.


- Station Management:

- Take ownership of your station, managing inventory and ensuring all necessary ingredients are prepped and ready for service. Maintain cleanliness and organization at all times.


- Collaboration:

- Work closely with the Sous Chef and Head Chef to ensure smooth kitchen operations. Communicate effectively with the team to coordinate service and maintain consistency.

 

 


- Quality Control:

- Participate in regular tastings and ensure that all dishes meet our standards for flavor, presentation, and freshness.


- Training and Mentorship:

- Assist in training junior kitchen staff, sharing your knowledge of techniques and best practices related to both Japanese and Peruvian cuisines.

Qualifications:
- Experience:

- Minimum of 2 years in a professional kitchen, with experience in a Chef de Partie or similar role preferred. Familiarity with Japanese and/or Peruvian cuisine is a plus.


- Culinary Skills:

- Proficient in various cooking techniques, including sushi preparation, grilling, and marinating. A keen understanding of flavor profiles from both culinary traditions is essential.


-Team Player:

- Ability to work collaboratively in a fast-paced environment, demonstrating strong communication and interpersonal skills.


- Attention to Detail:

- A commitment to quality, with meticulous attention to detail in food preparation and presentation.

Our top of the rank bar program infuses the flavors of Peru into culinary cocktails with a deep focus on Latin American spirits.

Later followed by Llama San, Peruvian-Japanese (Nikkei) restaurant in the West Village. We excitedly introduce Nikkei cuisines to NYC and our Llama Inn fan base.
+3 Stars NY Times, Nominated James Beard Foundation 2022 outstanding bar program, Tales 2022 Top 10 Regional Honoree Best US Restaurant Bar.

And across the Atlantic, our newest additions, Llama Inn Madrid and Llama Inn London.

Coming in the Winter of 2025 will be Papa San- a Peruvian Izakaya. Nestled into the Spiral building in Hudson Yards, this expansive operation will be the biggest in the family. Taking inspiration from Peru and Japan, the food menus will be crafted by Erik Ramirez, the cocktail program led by Tres Monos from Argentina, and will have an exciting wine and sake list.
