Job Details

We are looking for a Sushi Cook apprentice to join our intimate Omakase Room in Midtown Manhattan to prepare delicious sushi for our guests.

Sushi Cook's responsibilities include handling a wide range of raw fish and other ingredients, managing food stock, and working with an attention to detail to fulfill all orders within quality standards. To be successful in this role, you should have experience with Japanese cuisine and be available to work during our opening hours.  Ultimately, you will help us maintain our reputation and increase our clientele.

Responsibilities
  • Preparing traditional Japanese sushi rice
  • Expertly cutting, slicing, and filleting various kinds of fish, and placing orders for supplies as needed
  • Coordinate with our wait staff to ensure proper cooking, considering special requests and food allergies
  • Inspecting the quality of fruits, vegetables, and fish used to prepare sushi dishes and informing the Executive Chef when quality is sub-standard
  • Preparing various types of sushi dishes according to established guidelines on quality, portion size, presentation, and food safety
  • Maintaining a clean work environment in order to prevent food contamination
  • Regularly taking inventory of food supplies and other products
  • Reporting any problems with kitchen equipment to the manager on duty
  • Sterilizing all utensils, instruments, and equipment used in sushi preparation before every use
  • Communicating with wait staff to ensure that special requests and food allergy considerations are met
Requirements
  • Work experience as a Sushi Cook at a Japanese restaurant
  • Knowledge of various sushi types and Japanese sushi rice cooking techniques
  • Ability to work both fast and accurately
  • Team spirit
  • Availability to work during business hours, including weekends and evenings
  • Proven experience working in upscale sushi restaurants
  • Valid food handler's certificate
  • Sound knowledge of food safety regulations
  • The ability to work under pressure
  • The ability to stand for long periods of time
  • Excellent time-management skills
  • Exceptional customer service skills
