About Us:
Ploume is an intimate, high-energy subterranean bar nestled beneath The Ivory Peacock in Manhattan's Nomad district. Known for its innovative cocktails, curated music, and exceptional late-night dining, Ploume is a destination for unforgettable nightlife experiences. We are seeking a Nightlife Food & Beverage Manager to join our team and oversee the nightly operations of this dynamic venue.

Position Overview

As the Nightlife Food & Beverage Manager, you will lead Ploume's nightly operations, ensuring seamless service, vibrant guest experiences, and exceptional beverage quality. Your leadership will inspire a high-performing team while upholding the venue's reputation as one of Manhattan’s most exclusive nightlife destinations.

Key Responsibilities

Operational Leadership:

  • Oversee FOH operations during evening hours, ensuring smooth transitions between dining and nightlife services.
  • Maintain high standards of cocktail and beverage preparation, ensuring consistency and profitability.
  • Supervise opening and closing procedures for all evening shifts.

Guest Experience:

  • Shape the guest journey, delivering a curated and memorable nightlife experience.
  • Serve as the primary leader during service, engaging with guests and addressing concerns proactively.
  • Anticipate and accommodate VIP and special guest needs to ensure personalized service.

Team Development:

  • Collaborate with the General Manager to recruit, train, and develop a top-tier FOH team.
  • Lead nightly pre-shift meetings to communicate priorities, including VIP guests and service goals.
  • Coach and mentor staff, fostering accountability, collaboration, and professional growth.

Event Execution:

  • Manage private events, late-night programming, and special activations seamlessly.
  • Work with event teams to exceed guest expectations during all on-site experiences.

Beverage & Financial Acumen:

  • Partner with the beverage team to maintain Ploume’s innovative cocktail program, ensuring recipe accuracy and operational efficiency.
  • Monitor nightly sales, labor costs, and inventory, implementing strategies to drive profitability.
  • Ensure compliance with local, state, and federal alcohol laws and regulations.

Venue Management:

  • Maintain the aesthetic, cleanliness, and organization of Ploume’s FOH space.
  • Oversee small wares, fixtures, and overall venue infrastructure during nightly operations.
  • Troubleshoot technical systems, including POS and sound systems, as needed.
Qualifications:
  • Experience: Minimum 4+ years in nightlife management or senior hospitality roles within high-volume, upscale venues.
  • Education: Bachelor’s degree in Hospitality, Business, or related field preferred; equivalent experience considered.
  • Knowledge: Expertise in beverage programs, including cocktail creation and wine knowledge (certifications like WSET a plus).
  • Leadership: Proven ability to lead and motivate teams in a fast-paced, high-pressure environment.
  • Operations: Strong familiarity with FOH systems, including POS management, inventory, and payroll. Financial acumen in labor models, P&L analysis, and cost controls.
  • Compliance: Possess all necessary New York City food safety certifications.
Physical Demands:
  • Ability to stand, walk, and bend for extended periods.
  • Lift and carry up to 50 lbs.
  • Adapt to a fast-paced, ever-changing environment with flexibility.
  • Work a schedule inclusive of evenings, weekends, and holidays.
Compensation & Benefits:

Salary: $70,000 - $90,000 annually
