The Perlant is a private social club rooted in wine. Our goal is to build a community around a shared love of food and wine, paired with unmatched hospitality and member experiences.
The reason you must work in the kitchen at The Perlant is because you want to be a part of a team that works together to get through every ticket that comes in. In the kitchen you will learn (how to take) old school techniques and apply them to new and fun to work with products. In the Perlant kitchen we will always have time to break and eat together if you wish. In the kitchen at The Perlant we are going to have one voice but also have the autonomy to make decisions that are positive for service. When we are in service, all outside distractions will go away and we will be of one mind in executing call after call. When it's time for a “chat in the walk in” everything is going to be brought forward with respect and with a heart of understanding.
Responsibilities Include
- Prep your station with the following shift in mind- we are a team
- Have fresh herbs picked and chopped at the start of each service
- Wipe down the kitchen line prior to service
- Keep a mental count of proteins and notify your chef when you have 5 orders of anything
- Having steaks and chickens tempered during dinner service
- Keep a clean station
- Maintain communication with the porter team and the sous chef about pots and pans needed and with the runners for plate stocks.
- Make sure sauces and plates meet the standards of The Perlant
- Communicate with the sous chef and ask any questions regarding the service
- Assist in scrubbing down, giving inventory, and writing personal prep list
Skills Encouraged
- Culinary Techniques: Proficiency in a variety of cooking methods.
- Knife Skills: Strong knife skills for preparing ingredients quickly and safely.
- Time Management: Ability to manage time effectively to ensure timely preparation and service of meals during peak hours.
- Food Safety Knowledge: Understanding of food handling, sanitation, and storage practices to maintain a safe kitchen environment.
- Attention to Detail: Precision in following recipes, plating dishes, and ensuring consistency in food presentation.
- Multitasking: Capability to juggle multiple orders and tasks simultaneously, especially during busy dinner shifts.
- Teamwork: Strong collaboration skills to work effectively with chefs, servers, and other kitchen staff.
- Adaptability: Flexibility to respond to changing orders, special requests, or unexpected situations.
- Physical Stamina: Ability to work long hours on your feet in a high-pressure environment.
- Communication Skills: Clear communication with team members to ensure smooth operations and to coordinate timing for dishes.
- Menu Knowledge: Familiarity with the menu items, including ingredients and cooking methods, to answer questions and make recommendations.
