Job Details

The Garde Manger Cook is responsible for preparing cold appetizers, salads, charcuterie, and other dishes within the garde manger station. This position requires precision, creativity, and an eye for detail to ensure high-quality presentations that align with our culinary standards.

Key Responsibilities

  • Cold Food Preparation: Prepare and plate cold dishes, including salads, hors d'oeuvres, canapés, terrines, and charcuterie, with consistency and attention to detail.
  • Plating Standards: Ensure all items are beautifully presented and adhere to the restaurant's plating guidelines.
  • Ingredient Quality: Select and handle fresh ingredients with care, ensuring all products meet quality and safety standards.
  • Mise en Place: Maintain a well-stocked and organized station, preparing all mise en place before service begins.
  • Collaboration: Work closely with the culinary team to ensure smooth and efficient service, supporting other stations as needed.
  • Cleanliness & Organization: Maintain a clean, safe, and organized work environment, adhering to health and safety regulations.
  • Inventory Management: Monitor station inventory levels, minimize waste, and communicate needs for replenishment to management.
  • Innovation: Collaborate with the team to contribute ideas for new dishes, techniques, or enhancements to the menu.

Qualifications

  • Experience: Previous experience in a garde manger or similar cold station role, preferably in a fine-dining or upscale restaurant environment.
  • Knowledge: Strong understanding of cold food preparation techniques, including curing, pickling, and plating.
  • Skills: Exceptional knife skills, attention to detail, and ability to multitask under pressure.
  • Team Player: Strong communication skills and the ability to work collaboratively in a fast-paced kitchen.
  • Flexibility: Willingness to work evenings, weekends, and holidays as required.

Physical Requirements

  • Ability to stand for extended periods of time.
  • Comfortable working in a fast-paced environment.
  • Capable of lifting up to 50 pounds as needed.

Compensation Details

Compensation: Hourly ($21.00 - $22.00)
