Position Overview:
Mercadito is seeking a visionary and motivated Culinary Director to lead our culinary operations and bring our brand’s culinary vision to life. The ideal candidate will possess a deep understanding of Mexican cuisine, a passion for innovation, and the ability to oversee multiple facets of culinary management. As the Culinary Director, you will be responsible for shaping the menu, maintaining impeccable quality standards, mentoring our culinary team, and driving the strategic success of Mercadito’s kitchen operations.

Key Responsibilities:

  • Leadership & Vision: Set the overall culinary direction for Mercadito, ensuring alignment with our brand identity and long-term goals. Inspire and lead a talented team to deliver excellence.
  • Menu Development: Create and implement innovative, seasonal menus that reflect the rich flavors and techniques of Mexican cuisine while enhancing guest experience.
  • Operational Oversight: Oversee all kitchen operations, including procurement, inventory management, staffing, and scheduling, ensuring efficiency and cost-effectiveness.
  • Quality Assurance: Establish and enforce high-quality standards for food preparation, presentation, and consistency in every dish.
  • Team Development: Mentor, train, and develop kitchen staff, fostering a culture of collaboration, creativity, and professionalism.
  • Financial Management: Monitor food and labor costs, develop budgets, and identify opportunities to maximize efficiency while maintaining quality.
  • Health & Safety Compliance: Ensure the kitchen operates in compliance with all health, safety, and sanitation regulations.
  • Collaboration: Partner with executive leadership to create strategic initiatives, special events, and new concepts to elevate Mercadito’s reputation and guest satisfaction.

Qualifications:

  • Extensive experience as an Executive Chef, Culinary Director, or similar leadership role, preferably in Mexican or Latin-inspired cuisine.
  • Expertise in Mexican culinary traditions, ingredients, and techniques, combined with a flair for innovation.
  • Proven ability to lead and inspire a diverse culinary team.
  • Strong organizational and operational skills with the ability to manage inventory, food costs, and labor effectively.
  • Exceptional communication and leadership abilities.
  • Experience developing menus, managing budgets, and executing large-scale culinary initiatives.
  • Knowledge of industry health and safety regulations.
  • Culinary degree or equivalent professional experience preferred.
