You can't walk far in Israel before you're greeted by the seductive aroma of something delicious cooking over charcoal. It's not the sweet scent of hardwood - it's an aroma suggesting toasted spices, or charred fish skin, or chunks of marinated lamb. More than hardwood smoke, charcoal harmonizes with its subject. It teases out and accentuates its essence. If hard hardwood is the brash young cook who wants to transform every piece of food in the kitchen, charcoal is the mature chef who understands that restraint is often the best seasoning.
In Israel a father grilling lamb on the beach is joined by his son, a soldier who has driven hundreds of kilometers to spend a few precious hours with his family. The barbecue is the means, not the end –– the journey, not the destination. It brings people together –– at restaurants, parks, the beach, in the backyard, even on the side of the road. Sure, there are faster and more convenient ways to cook. But where is the joy in that?
