Maki House is a new fast-casual sushi concept in the heart of the West Village, redefining the everyday sushi experience. We’re bringing elevated simplicity to traditional maki rolls, combining the precision of Japanese techniques with an elegant and unique New York style. Our mission is to offer a refined yet approachable experience with high-quality ingredients and a curated, innovative menu. This isn’t just another sushi spot – we aim to create a memorable, welcoming environment for a modern audience who appreciates sophistication in simplicity.

Position Overview:
We're seeking an Executive Chef with deep expertise in Japanese cuisine, particularly sushi, who has a strong vision and passion for delivering refined, unique dishes. As Executive Chef, you will develop and maintain the culinary program, including ingredient sourcing, menu development, and kitchen operations, all while upholding the high standards and distinctive character of our concept.

Responsibilities:

  • Menu Development: Design and execute a menu centered on high-quality, traditional maki with unique flavors and textures, focusing on innovation within classic formats.
  • Ingredient Sourcing: Establish relationships with top suppliers, ensuring we use the freshest, highest-quality ingredients to uphold our standards.
  • Team Leadership: Build, train, and lead a dedicated kitchen team, inspiring excellence in every dish and maintaining a cohesive, collaborative environment.
  • Operational Excellence: Implement efficient kitchen processes, inventory control, and waste reduction strategies, maintaining quality and consistency in all menu items.
  • Customer Experience: Work closely with front-of-house to ensure a seamless dining experience that aligns with our refined, welcoming aesthetic.

Qualifications:

  • Extensive experience in Japanese cuisine, especially sushi, with a passion for elevating traditional formats.
  • Strong background in menu development, ingredient sourcing, and kitchen management.
  • Leadership experience, with a track record of building and managing effective, motivated teams.
  • Knowledge of modern kitchen technology and inventory management systems.
