As a Chef de Partie at Nikai, you will play a pivotal role in our elite Japanese dining venue. You will create exceptional dishes, ensuring that every guest enjoys a memorable dining experience that meets the high standards of Harbour Club. Your expertise and dedication will help create unforgettable experiences for our members and guests. Responsibilities:
- Food Preparation: Expertly prepare composed and elegant dishes, ensuring high standards of taste, texture, and presentation
- Creative Input: Contribute to menu development with innovative sushi and Japanese cuisine dishes. Stay updated on sushi trends and techniques.
- Station Management: Maintain cleanliness and organization of the station, ensuring all prep and mise en place
- Ingredient Management: Maintain the quality, freshness, and proper storage of all sushi ingredients, including fish, rice, and vegetables
- Knife Skills: Demonstrate exceptional knife skills and precision in cutting fish and other ingredients
- Menu Expertise: Maintain comprehensive knowledge of Japanese cuisine menus, including origins, preparation methods, special ingredients, and allergens
- Collaboration: Work closely with the culinary and service teams to ensure seamless dining experiences and timely delivery of dishes. Assist Chef(s) and management with ordering and keeping proper sushi ingredients inventory
- Sanitation and Safety: Adhere to all health and safety regulations, maintaining a clean and organized work environment.
Qualifications:
- Minimum of 2 years of experience in Japanese cuisine or fine dining
- Positive attitude with a strong willingness to learn
- Ability to accurately follow recipes and instructions
- Knowledge of basic food safety and sanitation practices
- Proficient knife skills and the ability to work efficiently in a fast-paced environment
- Strong organizational skills and attention to detail
- Availability to work at least 4 shifts per week
- Flexibility to work days, evenings, weekends, and holidays as required
- Physical stamina to stand, walk, and lift heavy items for extended periods.
