Job Details

Well established multi-unit, multi-concept, Michelin Star, restaurant group, We All Gotta Eat! has recently opened Chez FIfi, an intimate French bistro and lounge beautiful location on the Upper East Side. The restaurant features French cuisine with Basque influence and contemporary interpretations and a curated wine and spirits and cocktail program.  Our cocktail program features French spirits and classic and curated craft cocktails prepared in the tradition of Japanese mixology.

The right candidate should have a history of success cultivating regulars, and welcoming high profile and special occasion guests. Must have experience is selling craft and classic cocktails, rare and accessible wines to a discerning clientele. Knowledge and appreciation of Japanese mixology is a plus.

RESPONSIBILITIES

  • Responsible for executing  the restaurant’s bar program with consistency and high quality. 
  • Knowledge of Japanese mixology is a plus.
  • Must have through knowledge of cocktail, wine and spirits offerings menu and proper presentation. 
  • Able to discern guests' preferences, record and  guest notes on requirements, preferences and requests.
  • Act as host to guests. Personalize service for regulars, interact and touch every single table
  • Have proper bottle presentation, decanting and pouring of wines.
  • Responsible to supporting prep and side work and open and closing duties as needed.
  • Ensure compliance with federal, state and local laws related to alcohol sales, service and consumption, including training and enforcing of minimum drinking age requirement, TIPs training.
  • Responsible to maintain current knowledge of wines, spirts and cocktails, with on-going training and Company support.
  • Handling of tips must be in public view.

Physical Requirements include:

  • Active listening and learning skills.
  • Reading and speaking comprehension.
  • Discipline to follow set standards.
  • Able to stand for long periods of time.
  • Requires use of hands and to bend and reach.
  • Ability to lift up to 30 lbs.

CANDIDATE REQUIREMENTS

  • Must be personable, communicative and a team player.
  • Must have a desire for on--going learning of  wine and spirits and cocktails on own initiative and with Company support
  • Must have 3 + years' of bartending experience in a high-profile restaurant with a critically acclaimed menu and beverage program.
  • Must be able to multi-task and offer elevated service and treat all with respect. 
  • Must work with a spirit of collaboration.
  • Fluency in French language is a plus.
  • Must be able to work Sunday and Monday

Nestled in a charming Upper East Side townhouse, Chez Fifi invites guests into a refined and inviting atmosphere with a bistro inspired menu, a salon featuring innovative cocktails, and wines sourced from around the globe.

Executive Chef Zack Zeidman offers an a la carte menu that riffs on Parisian bistro classics with a nod to coastal northern Spain. A meal begins with foie gras terrine maison, deviled crab baked San Sebastian style, clam risotto, Escargots a la Bourgignonne, and steak tartare.

Plats Principaux such as the Poulet Rôti with foie gras jus, Filet mignon au poivre, and wild Dover Sole a la plancha are all in great company with a Pommes Fifi for the table. For dessert, classics such as Mousse au Chocolat and Baba au Rhum offer a little something sweet.

The beverage program, curated by Master Mixologist Yumi Nemoto, features an innovative martini menu including an umami-packed “Blue Cheese” with Roquefort-washed vodka, sake and olive brine, and a refreshingly complex “Tomato” featuring tomato liqueur, tomato water, rosemary and basil oil.
