Who You Are:
We are seeking a candidate looking to take the next step in their career to become one of two Sous Chefs at a new and exciting French restaurant. They will be a key member of our opening team working directly with the Executive Chef to guide and lead our team to becoming a new New York Classic. Candidates with prior experience as sous chefs at well-established fine dining restaurants are encouraged to apply. Candidates without experience in management will be considered for this role with exceptional work background as a chef de partie at high-end restaurants.
This will be a brigade-style kitchen with a clearly outlined hierarchy and honest communication. Members of the opening team will have the opportunity to help define the language, systems and culture of a new New York Classic. As this is a restaurant opening, flexibility in schedule will be required with strong growth and financial opportunities being offered to candidates who are pivotal to our success. The job will be full-time, primarily Wednesday to Sunday, working nights with an average of 55 hours per week. We are looking be looking to have the sous chef join our team immediately.
Details about the job:
- This role will be responsible for prep, and helping run service
- The kitchen will have one cold station and three hot stations responsible for cooking on the line
- We will plate most of the hot food on the pass and call orders to the cooks
- As this is a restaurant opening, flexibility in schedule will be required with strong growth and financial opportunities being offered to candidates who are pivotal to our success
- The kitchen and equipment will be brand new
- The recipes will be grammed out, tested, and work
- You will be expected to fill in for stations if cooks call out or do not show up.
- Service will be from 6pm to 11pm, Wednesday to Sunday.
Job Requirements:
- At least 3 years of experience working various stations in a high-volume restaurants, fine dining establishments
- Prior experience as a sous chef welcome, but not necessary with great prior restaurant experience
- Knife skills, plating techniques, sense of urgency and attention to detail
- Set of personal tools including but not limited to: chef knives, petty knife, slicer, chefs tools, etc.
- Ability to learn and follow recipes to execute dishes and prep
- Ability to learn and follow ordering procedure
- Ability to work in a team environment and take feedback well
- Ability to schedule and manage a culinary team
- Ability to work the pass, call tickets in a clear and coherent manner
- Maintain safe, sanitary and organized work stations as outlined by your supervisor and the Department of Health
- Lift and carry 30+ pounds
- Ability to work long hours standing, shifts will last up to 10 hours
