Job Description:

We are seeking an experienced and passionate Wok Chef to join our dynamic kitchen team at Mei Mei. The ideal candidate will have a strong background in Asian cuisine, particularly wok cooking techniques, and a dedication to producing high-quality dishes with precision and speed. You will play a key role in delivering an exceptional dining experience, combining fresh ingredients with traditional and modern flavors.

Responsibilities:
  • Prepare and cook a variety of dishes using a wok, including stir-fries, noodles, and other Asian-inspired meals.
  • Ensure all ingredients are fresh and prepared to high standards.
  • Maintain cleanliness and organization of the kitchen area, adhering to food safety and hygiene regulations.
  • Manage wok station efficiently to ensure smooth service during peak hours.
  • Collaborate with the kitchen team to develop new menu items and ensure consistency in food quality.
  • Monitor stock levels and assist with ordering supplies as needed.
  • Keep up to date with cooking trends and kitchen techniques.
Requirements:
  • Proven experience as a Wok Chef or in a similar role within a high-paced restaurant environment.
  • Expertise in Asian cooking, particularly wok techniques.
  • Ability to work in a fast-paced environment and manage multiple tasks.
  • Knowledge of food safety and sanitation standards.

Chef-owner Ho learned the restaurant trade through his family. He was born in Taiwan and grew up in Houston, Texas, helping his dad out at his restaurant when he was just a kid. His family moved to Allentown and set up a few restaurants there under Ho Ho Incorporated. Ho eventually took over the business in 2014 and is now expanding to Philly.

Ho calls his menu at Mei Mei “progressive Asian” and says he’s using modern techniques and ingredients for traditional dishes. It has something of an Asian fusion vibe with options like miso-crusted sea bass, miso caesar salad, rolled scallion pancakes with braised pork belly, Peking duck bao, Korean-style fried chicken wings, Taiwanese-style Hunan beef, and fried rice with Taiwanese sausage.
