Job Title: Pastry Director

Job Overview:
Our new and rapidly growing restaurant group is seeking a talented and experienced Pastry Director to lead our baking and pastry division. This role is pivotal in overseeing the pastry and baking operations across all locations, ensuring the highest levels of quality, consistency, and innovation. The Pastry Director will work closely with the Culinary Director and company founders to shape the creative direction of our dessert and pastry offerings, while also focusing on staff development, operational efficiency, and financial performance.
Key Responsibilities:
- Team Leadership & Management:
- Lead and manage the baking and pastry team across all locations, ensuring smooth and efficient operations while maintaining consistency and quality. Foster a culture of professionalism, creativity, and excellence within the pastry department.
- Operations Oversight:
- Oversee all aspects of baking and pastry operations, ensuring adherence to high standards of food preparation, presentation, cleanliness, and compliance with food safety regulations. Maintain consistency and quality across the company's various locations.
- Training & Mentorship:
- Train, mentor, and motivate pastry and baking staff, providing opportunities for growth and development. Create and implement comprehensive training programs to enhance skills, techniques, and adherence to company standards.
- Collaboration with Leadership:
- Work closely with the Culinary Director and company founders to align pastry operations with overall company goals. Assist in driving revenue growth through innovative menu offerings, and contribute to cost management and profitability strategies.
- Menu Development & Innovation:
- Collaborate on the development of seasonal and creative pastry menus that align with the company’s vision. Incorporate new techniques, ingredients, and concepts to elevate the dessert experience and keep the offerings fresh and exciting.
- Inventory & Cost Management:
- Assist in managing pastry inventory, ensuring efficient use of ingredients, and reducing waste. Help with cost control efforts, including vendor negotiations and portion control, while maintaining the highest product quality.
- Guest Satisfaction & Quality Assurance:
- Ensure that all pastry and baked goods meet the company's high standards for taste, presentation, and quality. Respond to guest feedback and address any issues related to the pastry program with professionalism and urgency.
- Special Events & Catering:
- Play a key role in the planning and execution of pastry and dessert components for special events, banquets, and catering services. Ensure the successful delivery of all pastry offerings during large-scale events, working closely with the events team.
Qualifications:
- A minimum of 6 years of experience in culinary or baking and pastry leadership roles, with a strong background in fine dining or upscale casual restaurants.
- A culinary degree or equivalent professional training from a reputable institution, with a specialization in baking and pastry arts.
- Demonstrated creative culinary skills and a passion for developing and executing exceptional desserts and pastries.
- Strong leadership abilities, with a proven track record of mentoring and managing a pastry team.
- Excellent communication and organizational skills, capable of managing multiple tasks and priorities in a fast-paced environment.
- In-depth knowledge of kitchen operations, including food safety regulations, cost control, and inventory management related to pastry and baking operations.
- Ability to work collaboratively with a cross-functional leadership team, contributing to overall business growth.
- Ability to work flexible hours, including evenings, weekends, and holidays, as needed.
