Job Purpose

Responsible for the retail fish and butcher counters as well as all fish/meat counter employees. Ensures the proper butchering of all fish and meat while maintaining a sanitary work space. Schedules and manages all employees, oversees the cleaning and maintenance of equipment and facilities and ensures that all health and safety regulations are adhered to. Directs hiring, assignment, training, motivation and termination of personnel. Documents, investigates and resolves all employee and guest incidents and directs escalated incidents to the appropriate outlet.

As an ambassador of Eataly products and services, the Fish/Meat Department Manager is responsible for helping to create and maintain quality experiences for each guest that comes to Eataly. Eataly ambassadors are expected to actively engage with guests and spend quality time with each customer.

Essential Responsibilities

Complies with company quality standards when ordering and butchering product offered in or at the department counters.
Keeps/supervises inventory, estimates ordering cost/needs, and receives/checks orders to ensure they adhere to specifications.
Ensures sanitary fish/butchering and work stations that meet the Department of Health standards
Directs hiring, training, scheduling, managing, and termination of all fish and meat counter employees.
Documents, investigates and resolves all employee and guest incidents including guest complaints. Directs escalated issues to the appropriate outlet.
Submits and reviews weekly payroll for all fish and meat counter employees
Reviews financial information such as sales and costs, and monitors budget to ensure efficient operation and that expenditure stay within budget limitations. Takes action to correct any deviations from the budget.
Sets the department standard for customer service duties for the fish and meat counters including producing appealing, seasonal product displays.
Manages stock levels and makes key decisions about stock control, actively collaborating with the Retail Manager and NY Purchasing Team.
Actively collaborate with location culinary team to optimize use of the internal transfer system to maximize product yield and reduce waste.
Analyze sales figures and forecast future sales volumes for planning and maximize sales
Minimum Qualifications

3-5 years of experience in butchering fish and meat in a customer service setting. Two year associate’s degree or a bachelor’s degree from a four year college desirable. Basic computer skills are necessary. Must be able to communicate politely and effectively with guests and other employees.


High school diploma desired or equivalent. Prior knowledge of the foods/products being sold at the specified counter is desirable.

Physical Effort

Position requires standing, bending and mobility the entire work day. Must be able to lift up to 60 pounds and work with band saw and other butchering equipment.

Mental Effort

Must be able to lead and manage the fish/meat counter team. Must be able to follow written and verbal instructions. Ability to communicate effectively and understand instructions.

Scale, packaging supplies, cash register, knife, band saw, etc.

Reporting Relationships

Reports to General Manager.
