About One White Street (OWS)
One White Street is a restaurant in downtown New York City from Chef Austin Johnson. Located in a historic Tribeca townhouse, One White Street is a place to feel at home.  At the restaurant we have two menus on three floors.  On the first two floors we serve an a la carte menu with a casual vibe, on the third floors we serve a tasting menu.  We work directly with a farm in the Hudson Valley who supplies the restaurant with fresh produce.  

About Rigor Hill Market (RHM)
Rigor Hill Market is a new, neighborhood cafe and marketplace from the team at One White Street.  Our mission is to highlight our farm, restaurant and the Hudson Valley.  Our farm partners are located in Ghent, NY.  We showcase fresh seasonal produce, cooked and prepared foods, and baked goods.  We serve coffee, tea and other beverages.  

About our Bakery Program
RHM houses a micro bakery with its own full production line.  We produce daily service breads for the restaurant, daily bread for the market sale as well as for the market sandwich program.  We produce daily laminated products for retail store sale.  Our bakery program also produces daily quiche, muffin and cookies for the market.  

General Description
The Head Baker is responsible for the production of all laminated and non laminated baked items.  They plan, prep, set up and provide quality service in all areas of food production.

The Opportunity
The Head Baker is the driving force of the bakery and plays an integral part of the market and restaurant.  They will be involved in daily production, training, maintaining standards, setting pars, ordering, receiving, r&d and expansion of the product line.  They will work closely with the Head Chef and Market Chef in executing the bread and pastry deliverables.  

Key Responsibilities
Service

  • Check production schedule and pars and establish priority items for the day
  • Prepare all menu items following recipes and yield guides, according to department standards in a time-efficient manner
  • Set up workstation with required mise en place, tools, equipment, and supplies according to standards
  • Work with the rest of the service team to oversee that all stations are set up properly and on time
  • Restock items that were depleted during the shift
  • Communicate with market floor staff to manage production timing, any client feedback, etc.
  • Update knowledge and skills by participating in staff training opportunities
  • Support and assist your fellow team members whenever possible
  • Complete other duties as assigned by management
  • Communicate all necessary guest information with the team to set everyone up for success (allergy alerts, VIPs, special requests, celebrations, etc.)

Sanitation, Hygiene, and Safety 

  • Maintain and strictly abide by state sanitation/health regulations and hotel requirements and procedures
  • Maintain complete knowledge of correct maintenance and use of equipment; use equipment and tools only as intended, properly, and safely
  • Inspect the cleanliness and organization of the line and workstations; rectify any deficiencies
  • Inspect the cleanliness and working condition of all tools, equipment, and supplies, ensuring everything complies with standards
  • Inform supervisor on duty immediately of any DOH or OSHA/workplace safety violations
  • Maintain proper storage procedures as specified by Department of Health requirements

  • Understand and communicate One White Street and Rigor Hill Market’s values and brand philosophy to customers and staff and set the tone for a positive work environment
  • Promote the vision while establishing us as an innovator within our industry
  • Actively involved in publicity opportunities and community outreach

Experience/Education

  • Minimum 4+ yrs experience as a Baker / Pastry Chef / Etc
  • Must have experience with lamination
  • Must have experience with the full range of bread production
  • Ability to lift and move 50+ lbs
  • NYC Food Protection Certificate (or within 90 days)
  • Able to work early mornings, weekends and holidays, and variable schedule, per the needs of the business
  • Ability to walk, stand, and/or bend continuously and for extended periods as required to perform essential functions
  • Ability to perform essential job functions when working under stress, in fast-paced environments
  • Polished personal presentation: grooming meets Company standards, as outlined by Employee Handbook

Compensation Details

Compensation: Salary ($70,000.00 - $80,000.00)
