Job Details

As the Commissary Baker Manager for Vesuvio, you will oversee the entire bread production process, ensuring timely, high-quality output while adhering to health and safety regulations. This role involves developing production schedules, managing a skilled team, maintaining  recipes, and controlling inventory and costs.

Key Responsibilities:

  • Oversee the entire production process to ensure timely and high-quality output.
  • Develop and implement production schedules and quality control procedures.
  • Manage and train production staff, ensuring adherence to health and safety standards.
  • Maintain recipes and develop new product offerings with guidance from the Director of Pastry Operations.
  • Monitor inventory levels, manage supplies, and control production costs.
  • Ensure compliance with all relevant food safety and regulatory standards.
  • Collaborate with other departments to address customer feedback and promote new products.
  • Identify and implement process improvements for increased efficiency and quality.

 

Requirements:

  • Minimum of 2 years in a managerial or supervisory role within a food production environment.
  • Familiarity with food safety regulations and best practices in packing and handling perishable goods.
  • Strong leadership abilities with experience in managing and motivating a team to achieve production targets.
  • Excellent organizational and time-management skills to prioritize tasks effectively in a fast-paced environment.
  • Clear and effective communication skills, both verbal and written, to interact with team members, management, and other departments.
  • Strong problem-solving skills to troubleshoot issues related to packing processes, equipment, and personnel.
  • Willingness to work evening and night shifts, including weekends and holidays, as needed to oversee operations and address any emergent issues.

Location: On-site at VESUVIO in New York City 

Schedule: Weekends and Holidays required

The same year Vesuvio opened, they welcomed their son, Anthony, who eventually ran the bakery for many years to come. Anthony was an icon, known to many as the heart and soul of Greenwich Village. He was not just a baker, but a staunch defender of New York City's parks and who sat on Community Board 2 for 52 years until his death in 2003.

Today, Vesuvio Bakery, Vesuvio Park and the Anthony Dapolito Recreation Center pay homage to Anthony's great contribution and love for New York City. The goal of the revamped and reimagined bakery is to honor and respect Vesuvio’s 100-year history, serving fresh baked Italian pastries, bread loaves, cookies, soft serve gelato, and more.
