JOB SUMMARY:
Sushi Cook is responsible for preparing high-quality sushi and sashimi dishes to meet the standards of excellence expected by our guests. You will collaborate closely with the kitchen team to uphold Reserve Cut's standards of excellence and deliver an exceptional dining experience to our guests.
ESSENTIAL JOB FUNCTIONS:
- Prepare sushi and sashimi dishes according to established recipes and plating standards
- Handle and portion seafood, including slicing, filleting, and cutting fish for sushi and sashimi
- Ensure the freshness, quality, and proper storage of all seafood and ingredients used in sushi preparation
- Follow recipes and plating guidelines to ensure consistency and accuracy in sushi preparation
- Maintain cleanliness and organization of the sushi station, including equipment, tools, and work surfaces
- Follow all food safety and sanitation protocols, including proper handling and storage of ingredients
- Ensure all the products and prepared items are properly labeled, dated, initialed, covered, and rotated following FIFO (first in, first out)
- Collaborate with other kitchen staff to ensure smooth and efficient operations during service
- Follow opening and closing procedures as instructed by kitchen management
- Uphold Reserve Cut's commitment to quality, excellence, and guest satisfaction in every aspect of food preparation
- Operate ethically to protect the image of the company
- Performs other duties and responsibilities as required or requested
JOB KNOWLEDGE, EXPERIENCE AND SKILLS:
- Previous experience as a Sushi Cook or Sushi Chef in a high-volume restaurant environment or sushi bar
- Proficiency in sushi preparation techniques, including knife skills, seafood handling, and sushi rolling
- Knowledge of different types of fish, seafood, and sushi ingredients, as well as sushi terminology and presentation styles
- Ability to work efficiently under pressure in a fast-paced kitchen environment
- Excellent knife skills and culinary techniques
- Attention to detail and commitment to maintaining high standards of food quality and presentation
- Culinary degree or relevant culinary training is a plus
- Ability to work flexible hours, including evenings, weekends, and holidays, as required
