**About Us:**
We are thrilled to introduce a new Japanese gastropub concept to the vibrant East Village neighborhood. Our menu will feature a unique blend of traditional and contemporary Japanese flavors, with an emphasis on small plates, Tokyo-style Neapolitan pizzas, and an array of sushi and hand rolls. We are seeking an Executive Chef with a passion for innovation and a deep understanding of Japanese cuisine to join our team and lead our culinary vision.
**Key Responsibilities:**
As the Executive Chef, you will play a pivotal role in shaping the culinary experience at our gastropub. Your responsibilities will include:
- **Menu Development & Execution:**
Craft a diverse and creative menu that showcases traditional Japanese tapas and contemporary dishes, including dumplings, noodles, fried chicken, and crunchy salads. Innovate with Tokyo-style Neapolitan pizzas as a special feature.
- **Culinary Leadership:**
Oversee all kitchen operations, ensuring top-notch food quality and presentation. Lead and mentor a team of culinary professionals, fostering a culture of creativity, teamwork, and continuous learning.
- **Recipe & Presentation Standards:**
Develop and maintain standard recipes to ensure consistency in preparation. Elevate plate presentation with a keen eye for aesthetics and detail.
- **Ingredient Sourcing & Inventory Management:**
Source high-quality ingredients, manage inventory effectively, and minimize waste. Maintain relationships with suppliers to ensure the freshest and finest ingredients.
- **Food Safety & Sanitation:**
Uphold the highest standards of food safety and sanitation, ensuring a clean and organized kitchen environment.
- **Collaboration & Special Projects:**
Work closely with management to design and implement daily specials and seasonal menu changes. Collaborate with the front-of-house team to create a seamless dining experience for guests.
- **Financial Oversight:**
Manage food costs and kitchen budgets, striving to achieve financial targets without compromising on quality.
- **Guest Experience:**
Cater to special dietary requests and allergies with creativity and professionalism. Stay attuned to customer preferences and emerging food trends to keep the menu fresh and exciting.
**Qualifications:**
We are looking for an Executive Chef who brings a blend of expertise and creativity, with the following qualifications:
- Proven experience as an Executive Chef in a high-volume, upscale restaurant or culinary establishment.
- Extensive training in Japanese cuisine, with a strong preference for chefs with additional training in French or Italian culinary traditions.
- Experience with sushi and sashimi is a plus, but not a requirement; we encourage all chefs with a passion for Japanese cuisine to apply.
- Demonstrated culinary innovation and creativity, with a history of developing unique and delicious dishes.
- Proficiency in a variety of Japanese and Asian-inspired dishes, including but not limited to Korean fried chicken, dumplings, crispy rice, sesame noodles, and more.
- Strong leadership and team management skills, with the ability to inspire and develop a talented culinary team.
- Exceptional organizational skills, attention to detail, and problem-solving abilities.
- A commitment to excellence in food safety and sanitation practices.
- Excellent communication skills and the ability to work collaboratively with the front-of-house team.
**Compensation & Benefits:**
- **Salary:** $100,000 - $125,000, commensurate with experience.
- **Benefits:** Health care benefits, including medical and dental.
- **Paid Time Off:** 2 weeks PTO.
