Job Details
Toasted Hospitality is looking for a sous chef to join the team at The Florian (https://florianchicago.com/).

The Florian
is a modern supper club with a focus on prime rib, classic cocktails, and a thoughtfully curated wine list conveniently located on the third floor of the Lyric Opera House.

Responsibilities:
  • Directs food preparation and collaborates with the Executive Chef.
  • Produces high quality plates, including both design and taste.
  • Assists with menu planning, inventory, and management of supplies.
  • Assists Executive Chef in managing day-to-day shifts, oversees food inventories and labor, closely monitors all safety and sanitation procedures, maintains equipment, and helps every employee provide guests with top-quality food that is always perfectly prepared and presented.
  • Ensures that food is top quality and that the kitchen is in good condition.
  • Keeps stations clean and complies with food safety standards.
  • Offers suggestions and creative ideas that can improve upon the kitchen’s performance.
  • Prepares food properly to spec via the Dropbook.
  • Assists in training new employees.
  • Assists in placing orders for food supplies.
  • Monitors and maintains kitchen equipment.
  • Solves problems that arise and seizes control of issues in the kitchen.
  • Expedites service.
  • Handle and resolves any food related issues, or complaints from guests or staff
  •  Able to work all kitchen stations in the absence of or tardiness of cooks, dishwashers or other kitchen staff members
  • Make sure all opening/closing duties are carried out correctly by kitchen staff and assist in the opening/closing process of the kitchen
  • Check the work of each individual who is opening/closing to ensure the line is properly stocked and ready for service and for the following day, and that the dishwashing area is clean and the dish machine is properly cleaned, drained and shut down. No dishes or garbage should be left.
  • Check stock of prepared items at the end of day/shift and with the help of the closing cooks create a comprehensive prep list for service the following morning
  • Ensures proper rotation and storage of all products
  • In the absence of the Executive Chef, conducts monthly inventory/ Monthly Maintenance Sheet.
  • Helps forecast and order food and supplies.
  • Attends management meetings.
  • Bilingual in both Spanish and English is highly preferred. 

The Compensation:
Salaried/Hourly (based on experience)
