Job: Head Baker (pre-opening production unit)
Location: Bronx, NYC
Salary: $70,000-$80,000 per annum DOE + benefits
My client is looking for a Head Baker for their brand new, state of the art production kitchen that will be based in The Bronx. This is a position concentrating on bread products, rather than pastry.
**This is a pre-opening position, for the opening in January 2025 you will be employed to work alongside the Executive Pastry Chef ahead of it opening, from space planning, equipment purchasing, recruitment and operations. This is a unit focused on high-quality over high-quantity that will be supplying a Boulangerie and 2 high-end restaurants**
Managing a small team of bread bakers in producing high standard speciality bread and viennoiseries, you will be part of an exclusive, adaptable and innovative new unit
Your artisanal mastery will flourish in our bakery, handcrafting exceptional baked goods that reflect your dedication to tradition, quality, and the artistry of baking.
Responsibilities:
- Daily production for items, including (but not limited to) viennoiserie, bread, croissant, brioche
- Management of a team of up to 4 - handles daily scheduling and rota
- Management of interviewing, hiring, training and reviewing of bakery staff
- Developing and creating new menu and recipes with Executive Pastry chef and wider team
- Management of organization of kitchen, including organization and cleanliness of dried storage and fridges
- Daily quality checks of products
- Food cost management
Their ideal Head Baker will possess the following skills and experience:
- Positive and problem-solving attitude
- Pre-opening phase experience essential
- Minimum 4 years’ Head Baker experience in a high-end bakery, production unit or high-end restaurant with a focus on bread and viennoiserie
- Classically and modern French trained
- A genuine passion and knowledge for bread
- Prior experience with laminated dough
- Dependable and hard-working
- Extensive hygiene experience, aware of all food safety standards (NYC Food Handler's License would be excellent)
- Must be available to work on different shifts, weekends, and holidays.
