Damian, located in the Arts District of LA, is currently seeking a highly driven and experienced Pastry Sous Chef to join our team!

Tasks and Responsibilities

  • Supervises and participates in the production of all pastry items
  • Manages the pastry team: hires; provides feedback and motivation; trains pastry production, principles and practices; coaches and counsels; and participates in terminations
  • Verifies all foods prepared to meet quality standards in terms of portion size, flavor, texture and consistency
  • Orders and requisitions of all supplies for the pastry department
  • Proactively communicates with the Chef de Cuisine on ideas for new recipes, and guest feedback
  • Maintains a clean and sanitary food production area according to Department of Health standards
  • Ensure proper storage of all pastry items in refrigerators and freezers to maintain product freshness.
  • Ensure that all equipment in the work area is properly cleaned
  • Ensure all food containers are dated and rotated as per company standards, ensure that all perishables are kept at proper temperatures
  • Create action plans to correct any food cost variances, control food waste, loss and usage per standards
  • Adhere to all company and department procedures, policies, expectations, and quality standards
  • Adhere to all company procedures as they pertain to personal appearance, attendance and conduct
  • Perform any other job-related duties as assigned.

  • Working knowledge of food and food preparation
  • Knowledge and understanding of safety, sanitation and food handling procedures
  • Extensive experience with slicers, mixers, grinders, food processors, etc
  • Thorough knowledge of pastry and breads
  • Advanced time management experience
  • Must be able to give and follow direction and communicate effectively
  • Strong work ethic with a keen sense of urgency
  • Impeccable service standards and attention to detail
  • Clean work habits and personal grooming

Physical Demands

Involves standing most of the time, as well as climbing stairs repeatedly. Also involves repeated reaching with arms and hands, carrying objects at times more than 40 lbs. bending and stooping.

Position Requirements

  • At least 4 years of experience in a high-volume, fine-dining pastry preparation position
  • Knowledge of pastries and techniques
  • Excellent communication and leadership skills
  • Degree from a post-secondary culinary/pastry arts training program is preferred but not required
  • Basic mathematical skills are necessary to understand recipes, measurements, requisition amounts and portion sizes
  • Proficient computer skills
  • Must be fluent in English and helpful to be conversational in Spanish
  • Ability to work a variable schedule, including weekends and shifts from morning through late night

Physical Demands

Requires standing for extended periods, walking, pushing, lifting up to 40 pounds, bending and reaching, stooping, using fingers and hands, kneeling, or crouching.


Compensation Details

Compensation: Salary ($70,000.00 - $75,000.00)
