Position: Little Fatty and Fatty Mart are seeking two experienced Sous Chefs to oversee aspects of culinary operations within the restaurant or market. As the Sous Chef, you will be a key leader in our culinary team underneath Executive Sous Chef, Culinary Director, and Chef-Owner David Kuo. Working closely with the General Manager, Culinary Director, Executive Sous Chef, Company Executive Chef, and Ownership, you will be responsible for overseeing kitchen operations, ensuring the highest quality of food is consistently delivered to our guests in at Little Fatty and Fatty Mart. You will maintain company systems to ensure operational efficiency and efficacy while maintaining quality control for the company’s high standards. Additionally, you will be tasked to manage a strong team who will help you execute a remarkable and popular dining experience.
- Culinary Excellence:
- Collaborate with the leadership and ownership to maintain the restaurant's menu, ensuring it reflects the Little Fatty x Fatty Mart concept and meets customer expectations.
- Execute and supervise food preparation, ensuring all dishes are prepared with precision and in accordance with established recipes, quality standards, and food safety guidelines.
- Continuously monitor and maintain the presentation, taste, and consistency of all menu items.
- Team Management and Training:
- Provide guidance and feedback to the kitchen team.
- Assist in recruiting, training, and developing kitchen staff, ensuring they possess the necessary culinary skills and knowledge to excel in their roles.
- Conduct regular performance evaluations, provide constructive feedback, and implement training programs to enhance skills and promote growth within the team.
- Foster a positive and collaborative work environment, promoting teamwork and effective communication among kitchen staff.
- Kitchen Operations:
- Oversee day-to-day kitchen operations, including food production, inventory management, and equipment maintenance.
- Collaborate with the leadership team to optimize kitchen workflow, streamline processes, and improve efficiency.
- Maintain a clean and organized kitchen, always adhering to food safety and sanitation standards.
- Ensure proper storage and rotation of ingredients, minimizing waste and maximizing freshness.
- Ensure proper ordering and receiving techniques and standards are consistently met.
- Quality Control:
- Conduct regular quality control checks to ensure all dishes meet the company’s high standards.
- Monitor and maintain food costs by effectively controlling portion sizes, minimizing waste, and optimizing ingredient usage.
- Work closely with the Executive Sous Chef to identify areas for improvement and implement necessary changes to enhance overall kitchen operations.
Qualifications and Skills:
- Previous experience of 4+ years as a Sous Chef or similar role in a fast-paced restaurant environment.
- Strong culinary skills with on Asian cuisine.
- Bilingual (Spanish/English) preferred.
- Extensive experience in ordering and receiving.
- Proven leadership abilities, with the capability to motivate and inspire a kitchen team.
- Excellent organizational and time management skills, with the ability to prioritize tasks and meet deadlines.
- In-depth knowledge of food safety and sanitation regulations.
- Strong attention to detail and commitment to delivering high-quality dishes.
- Excellent communication and interpersonal skills.
- Ability to thrive in a fast-paced and dynamic work environment.
Essential Functions and Abilities:
- This position requires excellent communication skills including verbal and written competencies. The position also requires the ability to read, understand, and interpret general communications and business documents.
- This position requires excellent math skills in addition to strong problem-solving proficiencies.
- Computer skills are required with the specific proficiency of using the internet and business tools like email and Microsoft Word, Excel, and some other software.
- This position requires long periods of standing and can often require lifting of heavy supplies or materials.
