Right Proper Brewing is currently seeking a full-time executive chef to oversee all kitchen operations at our Shaw Brewpub, and by the end of the year, oversee the opening and operations at our new location in Eckington. We are looking for someone with experience running a scratch kitchen and passionate about American pub fare. The executive chef will have creative control over menu design and be responsible for all kitchen operations, including food ordering and inventory, food cost and labor management, and hiring, training and scheduling of all kitchen employees. The right candidate will stay calm and collected under pressure, work well in a fast paced environment, and create a respectful and stable work environment. Bilingual in Spanish and English is strongly preferred.
Primary Duties include, but are not limited to:
· Promote, work, and act in a manner consistent with the mission and values of Right Proper Brewing Company.
· Schedule hourly kitchen staff as required for anticipated business activity while ensuring that all positions are staffed when and as needed and labor cost objectives are met.
· Manage food inventory and ordering, ensuring that we don’t run out of menu items, and don’t have excess resulting in waste, and the food cost of sold objectives are met.
· Maintain creative control of menu and determine menu changes seasonally or as needed.
· Oversee all kitchen staff including: recruiting, interviewing, hiring, training, evaluating, developing, counseling, and termination as appropriate.
· Ensure that all food dishes are consistently prepared and served according to the restaurant’s recipes, portioning, cooking and serving standards.
· Ensure compliance with all health and safety regulations and sanitation standards and get certifications as required.
· Inspect, maintain and clean supplies, equipment, and work areas to ensure conformance to established standards. Create cleaning and maintenance schedules.
