Job Details

The Prep Kitchen produces all bread for Chef Daniel Boulud’s NYC properties.  The Chef Boulanger will manage and supervise all bread bakers and the production of bread for all seven of Daniel Boulud’s NYC properties.  This is a salaried management-level position.

Essential Duties:

  •  Create and test bread recipes for production
  •  Create production schedule and staff schedule
  •  Hire and train bakers, evaluating performance daily
  •  Work closely with chefs and managers regarding orders, invoicing, and any issues
  •  Manage commissary steward/receiver and supervise invoicing to restaurants

Competencies & Qualifications:

  • Strong experience with artisan baking, with at least 3-5 years in a management leadership role and preferred experience in a fine-dining and/or French restaurant
  • Strong communication and organizational skills
  • Ability to constructively train and develop staff skills
  • Resourcefulness to solve problems and lead by example
  • Ability to manage multiple priorities and deadlines in a fast-paced, high-volume environment
Professional training in baking and pastry arts, with focus on bread preferred

Compensation Details

Compensation: Salary ($100,000.00 - $110,000.00)
