Mindy's Bakery, by James-Beard Award Winning Chef and Owner of Mindy's Edibles, Mindy Segal, is looking for an experienced Pastry Cook to join its team! We are located in the heart of Wicker Park, right off Milwaukee and Damen.

Mindy’s Bakery is a diverse collective of talented artisanal bakers and passionate counter staff who work continuously on our craft. We strive to provide a memorable yet efficient experience, create the best product using quality ingredients, unparalleled technique, and always serving fresh from our oven to your table.

The ideal candidate will have a positive attitude, strong work ethic, pastry production experience (including but not limited to: making doughs, laminating, and baking), and a keen eye for detail. We are looking for an individual who strives to learn and grow, thrives in a busy environment, and can handle the volume we do.

Job Responsibilities & Expectations:
+ Set up & break down of your station
+ Follow & execute proprietary recipes, both from our recipe book as well as verbal instructions
+ Complete tasks on prep list in a timely and efficient manner 
+ Receive, understand, and learn from constructive criticism 
+ Knowledge of our menu - including all rotating specials, beverages, preparation techniques, main ingredients, and allergen information
+ Follow all safety & sanitation guidelines 
+ Follow all checklists that pertain to opening and closing, and feel confident performing all the tasks associated with both 
+ Maintain a presentable appearance and adhere to our dress code
+ Maintain appearance and cleanliness of the bakery - keeping counters, displays, tables and floors clean and presentable at all times

Requirements & Qualifications:
+ Minimum 2 years experience in Pastry Prep/Production 
+ Strong communication skills
+ Strong priortization skills 
+ Organization skills 
+ Ability to excel in a team setting
+ A valid Food Handler's Certificate
+ Ability to stand for the duration of a shift
+ Ability to work early mornings (as early as 4 AM)

Compensation & Benefits:
+ Salary (negotiable based on experience, starting at $800/week or $20/hr), plus pooled tips, which are added to the last paycheck of each month
+ Weekly pay (every Friday)
+ PTO
+ Subsidized health insurance

Schedule:
This position is FULL TIME (5 days per week), and requires weekend and holiday availability. 

Our bakery is open Wednesday through Sunday -- 7:30am to 3pm during the week, and 8am to 3pm on Saturday and Sunday. However, we have staff working and prepping daily. This position requires early morning and afternoon availability.

Compensation Details

In 2005, Mindy Segal opened her first restaurant, HotChocolate, after years of honing her craft in some of Chicago’s finest restaurants, including Charlie Trotter’s, Ambria, Marché and MK. Over 15 years, Hot Chocolate became a beloved neighborhood restaurant, both with diners and media alike. Notably, she was a five-time nominee and in 2012, was selected as the “Outstanding Pastry Chef” in the country by the esteemed James Beard Foundation. Her best selling cookbook “Cookie Love” was released in the spring of 2015, and Mindy has appeared on The Today Show, The Martha Stewart Show, The Food Network, and in the pages of Food & Wine, Bon Appetit, and the New York Times.

Always evolving, in 2016 Mindy partnered with Cresco Labs, Illinois’ largest cannabis cultivator and has reinvented the cannabis-infused sweets industry with her new product line. February 26, 2018 was named “Mindy Segal Day” in an official proclamation by the city of Chicago and fun fact - HotChocolate was the correct answer to a Jeopardy question.

After the pandemic hit in 2020, Hot Chocolate closed to morph into weekend bakery pop-ups, where she’s gone back to her roots, filling the neighborhood with the delicious scents of yeast, sugar, flour and more. In summer of 2022, Mindy officially opened Mindy’s Bakery on Milwaukee Avenue in Wicker Park, where she and her staff continue to work on their craft daily.
