Job Details
Dover Street Market is seeking a Chef to manage their Rose Bakery kitchen and retail space.

Founded in Paris in 2002 by Rose and Jean Charles Carrarini, Rose Bakery’s signature fresh and natural food was brought to the ground floor of Dover Street Market Los Angeles in 2018. The Bakery’s menu changes every day to reflect the very best ingredients available. This philosophy has garnered an international following, two renowned cookbooks by Phaidon and multiple locations in Paris, London, Tokyo and Seoul. The Café’s
commitment to seasonal, healthy and nutritious eating has made menus staples such as the Quiche and Carrot Cake worldwide best-sellers.

Position Overview: 
Rose Bakery in search of a highly innovative and creative Head Chef / Café Manager to oversee the Front of House (FoH), Back of House (BoH), and retail operations of the café. This role entails curating and executing daily Savory and Pastry menus, procuring ingredients, team management, customer service, event coordination, catering, recruitment, training, and ensuring compliance with health and safety regulations.

Key Responsibilities:
  • Construct menus with new or existing culinary creations, ensuring the variety and quality of servings.
  • Manage our retail program. Overseeing and sourcing products to carry within the cafe.
  • Fully in charge of recruitment and training.
  • Comply with nutrition, sanitation, and safety regulations in accordance to local law.
  • Responsible for sourcing and placing food and non-food orders.
  • Ensuring all menus and ingredient selections are in accordance with the Rose Bakery philosophy and standards.
  • Meeting/exceeding sales goals and adhering to strict food and non-food budgets.
  • Planning and coordinating events within Dover Street Market New York.
  • Taking charge of the catering business from start to finish including developing menu’s, pricing, and invoicing.
Key Requirements & Skills: 
  • 4+ years’ experience managing both BoH and FoH teams in a café or restaurant setting.
  • Outstanding communication and leadership skills
  • Capable of multi-tasking while maintaining a high attention to detail.
  • Flexible to the needs of the business.
  • Ability to lead recruitment, training, and development of bakery staff.
  • Knowledge of proper timekeeping and payroll procedures.
  • Ability to stand for prolonged periods of time.

Schedule Expectations:
  • 8:30am - 6pm, flexible days which must include one weekend day
Reporting Structure:
  • This position reports to the Head of Retail and is responsible for managing a Pastry Chef, two line cooks, and two porters.

Compensation Details

Compensation: Salary ($80,000.00 - $95,000.00)
