The Thompson Hotel is Hiring for a Chef de Cuisine!
Job Summary: The Chef de Cuisine will work alongside VP of Culinary Operations to manage daily kitchen activities, assist with recruitment efforts, training new staff members, overseeing staff, aiding with menu preparation, ensuring food quality and freshness, catering special events, and monitoring inventory, and managing all aspects of the department budget. The Chef de Cuisine will also be responsible for working alongside the Chef Partner to create, update, or change menu items.
Duties and Responsibilities:
- Assists with supervision of BOH staff including receiving and storing inventory, training new staff members, and running service.
- Responsible for recipe R&D and creating new menus for the restaurant as well as any special menus for events or other hotel functions.
- Maintains updated and accurate recipes and costing for all dishes.
- Is responsible for the oversight of all methods of preparation, portion sizes, and timeliness of food preparation; control food and usage to minimize waste.
- Ensures cleanliness of kitchen area following OSHA and food handling guidelines at all times.
- Promotes teamwork and quality service through daily communication and coordination with the restaurant team.
- Responsible for scheduling, creating pars and prep lists for Prep and Line Cooks.
- Maintains accurate and detailed production records.
- Acts as the expo during service, and also assisting with preparing food items on the line for service when necessary.
- Assists with recruitment of Kitchen talent, including reviewing resumes, interviewing, and reference checks.
- Responsible for entering and managing the department’s payroll, including entering tips and reviewing timecards.
- Prepare for and attend monthly P&L meetings.
Qualifications:
- At least 5 years in kitchen management.
- California Manager Food Handlers certified.
- Hotel and fine dining experience preferred.
- Must have high-volume experience.
- Catering experience is a plus.
Physical Requirements:
- Move, lift, carry, push, pull, and place objects weighing less than or equal to 50 pounds without assistance and heavier lifting or movement tasks with assistance.
- Move up and down stairs, service ramps, and/or ladders.
- Must be able to stand for long periods of time and have ability to perform well-paced mobility.
- Reach overhead and below the knees, including bending, twisting, pulling/pushing, and stooping. Enter and locate work-related information using computers. Perform other job duties as requested.
