this role is an overnight role

**Location:** Williamsburg, Brooklyn

**Salary:** $90,000 - $100,000 + Competitive Benefits

**Schedule:**

- 2 days off back-to-back, could be weekend

- Non-traditional hours (e.g., 6 PM - 2 AM)

- Schedule designed to accommodate savory production needs

**Job Description:**

The Executive Pastry Chef (EPC) for our new Williamsburg location will play a critical role in maintaining and developing our pastry and bread production program. Reporting directly to the Culinary Director, the EPC will oversee all pastry products, recipe development, and food and labor costs associated with the department. This role requires a professional with a bakery/production background who understands our brand's needs and can seamlessly integrate into our culinary traditions without attempting to completely overhaul our established program.

**Key Responsibilities:**

- Ensure that food quality and service consistently exceed company standards of excellence.

- Recruit, hire, and train all pastry staff.

- Streamline pastry processes to enhance food quality, improve production efficiency, and reduce departmental costs.

- Support revenue and cost initiatives by tracking labor hours and cost of goods.

- Enforce food handling regulations and maintain proper sanitation standards.

- Utilize company programs and platforms to enhance communication, transparency, and streamline operations across all company locations.

- Collaborate with the Executive Chef to ensure the pastry program reflects our culinary traditions, history, and brand.

- Supervise the production kitchen to optimize physical work and storage space, equipment usage, and timing for a cohesive working relationship with the commissary kitchen.

**Essential Functions:**

- Maintain high standards for product quality and service delivery.

- Oversee the day-to-day operations of the pastry department.

- Manage and develop pastry recipes in line with our brand’s identity.

- Ensure proper training and development of the pastry team.

- Handle multiple projects simultaneously with attention to detail.

- Plan ahead for future business demand and adjust operations accordingly.

**Position Requirements:**

- Ability to lift at least 50 lbs.

- At least 5 years of experience managing a pastry program and team.

- Strong communication skills and the ability to work effectively in a team environment.

- NYC DOH food handler’s permit card.

- Demonstrated ability to streamline production processes and manage costs.

- Capacity to work a flexible, non-traditional schedule to meet production needs.
