Sous Chef Chocolatier
Maxime’s is the newest opening from the club owner and entrepreneur Robin Birley; owner of prestigious private member’s clubs 5 Hertford Street and Oswald’s in London.
Opening in Fall this year, Maxime’s is located on Madison Avenue, New York in the site of the former Westbury Hotel and will continue the long established Birley tradition of providing exceptional experiences to our members and guests.

We are looking for a talented and passionate Sous Chef Chocolatier to work directly with our Executive Pastry Chef. He or she will be responsible for overseeing all the bread and lamination production for the shop and the restaurants. This includes managing the chocolate team to produce both quantity and quality to fulfil orders. The ability to maintain accurate recipes and an organized workspace is necessary. The ideal candidate is an excellent manager and coach with strong organizational and administrative abilities. The Sous Chef Chocolatier is responsible for supporting, managing and developing all teams’ members to exceed business goals.
Duties and Responsibilities
- Work with our culinary team (Executive Pastry Chef, Sous Chef) to craft and develop a diverse range of chocolate and decoration for our Restaurants and Bakery-Pastry shop.
- Consistently produce items to a high standard
- Uphold cleanliness and safety protocols, in line with our commitment to excellence
- Engage in continuous professional growth
- Foster a collaborative atmosphere, working closely with your team
- To be involved in menu planning, budgeting and inventory management.
- Strong leadership, organization and creative skills are essential in this role.
- Manage and track food wastage
- Create and maintain SOPs for all the processes and procedures

Compensation and Benefits
- $70,000 - $75,000 Salary per annum
- 10 days PTO

Position Requirements:
- A minimum of 3-5 years’ experience in this role.
- Have knowledge on different kind of Breads and Viennoiseries
- Team-focused mindset and emphatic approach to collaboration
- Excellent communication , organizational and interpersonal skills
- Ability to remain calm under pressure
- Ability to demonstrate quick thinking and adaptability in a constantly changing environment
