Empire Cake, a popular gourmet American-style bakery in Chelsea is seeking qualified candidates for a full-time Head Pastry Chef. We are an independent and a locally owned bakery that has been creating classic American sweets in the heart of Chelsea for nearly 15 years. The ideal candidate will be experienced, creative, hardworking, organized and looking to grow with us as we expand into Greenwich Village this fall.

Job Overview

Reporting to the two co-owners, the Head Pastry Chef oversees and manages all areas of the kitchen and pastry production. They will be responsible for ensuring the quality and safety of all products and for recipe development for seasonal specials. They will also be responsible for coordinating all kitchen-related activities, including: (a) the supervision of a small team of bakers, pastry assistants, and porters (as well as the hiring and training of new kitchen staff when necessary); (b) setting daily pars, managing inventory and all food ordering; (c) maintaining a high standard of sanitation and supervising maintenance of kitchen equipment. In general, the Head Pastry Chef is expected to maintain a clean, efficient and well-functioning food service environment. They will also coordinate their department’s activities with our other departments, including the FOH, the Cake Consulting Department and the Decorating Department.

Responsibilities and Duties

BAKING

  • Oversees the production of all items for the bakery, including special orders and events
  • Maintains quality control over all products being produced and ensures all products are correctly prepared, baked and displayed
  • Develops and tests recipes, creates seasonal and holiday items
  • Responsible for setting the daily pars for all products, cakes, cupcakes, fillings, and frostings
  • Implements systems and processes designed to maximize efficiencies and production

MANAGING STAFF

  • Directly responsible for a small team of approximately two bakers, one pastry assistant, one or two porters and possibly one extern
  • Manages and assists the kitchen staff in all aspects of food production, including supervision, development and, when necessary, discipline of employees (verbal and written warnings)
  • Creates and manages schedules
  • Hires and trains all kitchen and cleaning staff
  • Ensures compliance with our operational standards, company policies & health & safety laws in line with our handbook guidelines

ORDERING

  • Manages inventory, oversees food ordering, and helps to maintain consistent food budget
  • Orders all dairy products, dry goods, specialty products, coffee and paper
  • Works with our vendors to negotiate lowest possible prices for all items
  • Responsible for ensuring that all invoices are accurate, on time and in accordance with company policies and procedures
  • Completes all end of day, weekly and monthly reporting in a timely and complete manner
  • Manages waste and inventory logs; oversees the tracking and reporting of all wastage, implements corrective plan of action

SANITATION

  • Maintains excellent sanitary practices in line with DOH standards for food handling, general cleanliness, and maintenance of kitchen, food storage areas and FOH, and trains the team to do the same

MAINTENANCE

  • Establishes and maintains a regular maintenance schedule for all kitchen equipment, including ovens, mixers and refrigeration equipment, FOH equipment including espresso and coffee machines, HVAC, hood and exhaust fans, and pest control
  • Completes regular maintenance walk-throughs of the space to ensure all equipment is working properly
  • Takes the lead on all repairs
  • Ensures all weekly side-work, deep-clean checklists and maintenance upkeep checklists are completed

GENERAL

  • In addition to these responsibilities, as the Head Pastry Chef the most important thing is to maintain flexibility and jump in wherever you are needed as various duties may arrive outside of this list

Relationships

Reports to the owners. Manages the bakers, pastry assistants, porters and externs. Works closely with and maintains communication with the Cake Consultants, Decorating department and icers

Compensation: Salary ($70,000.00 - $80,000.00)
