Michelin starred Chef Shaun Hergatt seeks passionate and highly motivated Chef De Cuisine. Qualified candidates should have at least 5 years management level experience in Michelin starred fine dining restaurants. An interest in seasonally driven menu items is a must. This position is responsible for menu and recipe development for all meal periods and special events. He or she must have a well understanding of managing food and labor cost.
He or she is directly responsible for the cost-effective operations of clean and safe kitchens and dish room facilities while assisting with ongoing supervision of producing food of the highest quality, executed in a timely and consistent manner.
Requirements
- Two-year Culinary degree or Apprenticeship
- NYC Food Handler's Card
- Minimum of five years’ experience in a Michelin rated restaurant
- Minimum of five years Management experience in a 5 Star hotel/restaurant
- Thorough knowledge of all cooking methods
- Working knowledge of recipes and ordering
- Ability to dictate responsibility, pay attention to detail, handle multiple tasks and show a high level of patience
- Must be excellent at follow-through
