Located in Fishtown, Philadelphia, Wm. Mulherin’s Sons is an urban Italian restaurant and hotel thoughtfully converted from a former 19th century whiskey blending and bottling factory.
Wm. Mulherin’s Sons features rustic Italian, wood-fired cuisine that emphasizes the smokiness and char of the wood burning oven & grill. We serve a casual, yet sophisticated & seasonally driven menu in a hip and nostalgic environment. The beverage menu features quality-driven cocktails along with a curated list of well-crafted beer and approachable wines from the Old and New World, carefully selected to complement the style of cuisine.
We are currently searching for a talented Executive Chef at to lead our team. The strongest candidate will display innate leadership qualities and an ability to attract, motivate and retain talented cooks. As a team member they will display reliability, a strong work ethic and an ability to absorb work. The Executive Chef will work closely with Method Co’s Culinary Director to ensure food quality, menu creativity and service remain expectational.
JOB RESPONSIBILITIES INCLUDE BUT ARE NOT LIMITED TO;
- Execute and oversee the production of all menu items.
- Assessing the BOH talent levels of existing team members and training, recruiting and hiring as necessary to ensure that we execute the menu at the highest levels on a consistent basis
- Food quality and consistency while at the same time keeping food and labor cost in line with or below budgeted levels.
- Performing research and development in order to help continually refine and improve the menu.
- Participate actively in daily/weekly metric monitoring, monthly financial statement reviews and annual budget forecasting and reviews.
- Ability to execute all positions on the line and support staff when they need additional coaching
- Complete understanding of restaurant safety and emergency procedures
- Ensure all food items are of top quality and menus are aligned with current trends and in-season
- Ensure A+ standards for kitchen cleanliness and follow all Health Department Guidelines to ensure proper food handling
- Expedite orders correctly and efficiently to ensure smooth kitchen flow.
- Perform line checks to include temperature checks of all refrigeration, rotation and dating of all foods, proper prep(taste), freshness and specials completed for the nights service.
REQUIRED QUALIFICATIONS
- Minimum 3-4 years executive chef experience in a similar environment.
- Fully understand Italian cuisine including pasta and pizza dough production.
- Competent in fabricating all meat, fish, and poultry.
- Excellent product identification knowledge in produce, meats, fish, herbs, grains
- Understand, and have the ability to train, on all cooking methods: braising, poaching, roasting, steaming, sauté, grilling, blanching.
- Management certified according to state health department criteria
