Job Description: General Manager
The General Manager position at COOKBOOK MARKET is expected to accomplish the following:
- Arrive and leave on time in accordance with daily tasks
- Dress appropriately every day for work
- Create relationships with all guests and provide a welcoming environment through guest interactions at the front door and via e-mail or phone correspondence
- Write hourly staff schedules and ensure compliance with break policies. Have a complete understanding of each employee's availability and pay rates
- Create templates in 7 shifts for store schedules based on time of year & days of week, as well as business operation needs
- Code and enter invoices in PCL, submit weekly packets on time
- Ensure hourly employees follow all break policies in effect at this location. Understand and manage labor, OT & break penalties.
- Oversee organization and maintenance of cleanliness and ensure shelves and display cases are stocked in the FOH space
- Manage costs, including receiving products using the receiving logs, entering invoices, overseeing inventories, cross checking toast prices and daily spending
- Develop a good working knowledge of the financial aspects of the restaurant including the PCL, Petty Cash Sheet, Inventory documents and Inventory Reporting
- Completion of weekly inventories
- Review and run payroll for all hourly employees
- Communicate all challenges that arise on a daily basis with appropriate managers and supervisors and problem solve together
- Ensure a hospitable experience for all guests and maintain high guest satisfaction
- Able to thoughtfully describe all store items and use this knowledge to provide suggestions to guests
- Conduct interviews, hire, onboard new employees, and conduct reviews per company policy
- Check out customers at the register, as needed, ensuring that all items have been rung in properly and all items are packed for the customer
- Ensure new employees are trained effectively
- Conduct reviews of hourly employees per company policy
- Master café steps of service and maintain oversight of excellence
- Assess all store systems for efficiency and effectiveness.
- Communicate effectively with other store managers and buyers
- Communicate with wine buyer regarding receiving, tag-making, sales, and pertinent wine information
- Upkeep and understanding high standards for food quality control to uphold Food Safety Standards
- Upkeeping Sanitation and Cleaning standards following procedures and using proper checklists
- Respecting the facility - picking up trash, cleaning up after yourself, taking the initiative to clean, letting appropriate supervisors know if anything is in disrepair.
- Oversee and ensure all opening and closing checklists are done properly
- Working with a sense of urgency in a fast-paced environment and work in a timely and efficient manner
- With the Director of Operations create FOH reference guides for all aspects of Cookbook: Barista, Produce, products, deli, prepared food, grab & go, cafe menu.
- With the Director of Operations work on Job descriptions that suit the Larchmont space and develop a complete training program for hourly employees.
- Take ownership of all proper receiving processes; all products should be up to the standards of the restaurant.
- It is important that the Larchmont location hits their target COGS. 68-72% blended COGS between labor and cost of goods is the goal. Anything above 72% is unacceptable.
