Busy East Hampton restaurant, Moby’s, is seeking a Chef de Cuisine for it’s upcoming summer season.
Moby’s is located in a charmingly restored property from the 1880s on a quaint stretch of Highway 27 that leads to Montauk, adapting to the times with extensive to-go offerings, outdoor and patio seating. Moby’s offers an Italian menu of wood-fired pizza, pasta, sides and salads, along with bottled cocktails and wine, offered for pick-up and dining.
CDC will report directly to Ownership. The position’s responsibilities will evolve as the season goes on and more team members are brought on. A flexible, can do anything attitude is required.

RESPONSIBILITIES INCLUDE:
- Monitoring daily labor and food cost reporting sheets to ensure costs are trending within budgeted parameters
- Maintain all food inventory: order, receive and account for all food products and purchases.
- Hire, orient and train all BOH staff to ensure that the highest standards quality are met.
- Schedules for BOH team
- Ensure that sanitation standards as set forth by local, state & federal Health Department regulations are in compliance as well as the cleanliness and organization of the kitchen and its equipment along with New York State Covid 19 legislature.
- Maintain Moby’s core menu and identity while adapting offerings with local farm produce and creating specials as needed
- Expedite as needed
REQUIRED EXPERIENCE, SKILLS and QUALIFICATIONS:
- 3+ years of previous experience as a CDC or Executive Sous Chef
- Bi-lingual in Spanish huge plus
- Experience leading a team of 25+, including porter team
- Must have NYC or Suffolk County food handlers certification, or willing to obtain certification upon hire
- Food ordering and inventory knowledge mandatory
- Strong financial and computer skills; experience working with and understanding of P&L’s.
- Good knowledge of food trends with a focus on quality, production, food cost controls, and presentation.
- Ability to lead and discipline a team, and positively influence employee behavior. Scheduling a team of 25+.
- Experience with a wood-burning oven and making fresh pasta
- Experience in a high volume service (500+ nightly covers) and production environment

Compensation Details
Compensation: Salary ($95,000.00 - $115,000.00)
