ABOUT THE COMPANY
Citizen Sprout is a delicious, homemade school lunch delivery business serving students all across Los Angeles.

POSITION SUMMARY

Citizen Sprout is looking for a highly organized, efficient, knowledgeable and communicative Sous Chef to join our team as we embark on a rapid growth phase. This person will function as the core leader of the kitchen and the sucessful execution of all responsibilities will rely heavily on leadership, communication and ownership. 

PRIMARY JOB FUNCTIONS

  • Oversee the day-to-day operation of the Citizen Sprout food program, including management of all kitchen staff members at our two locations in Los Angeles. 
  • Lead and manage all kitchen staff members including the evaluation, training, hiring and scheduling of all new staff members. 
  • Develop a training / cross-training program for new - hires of the kitchen staff. 
  • Have a hands-on approach on the training of new line - cook employees. 
  • Take ownership of all food and labor-cost related fiscal goals as laid out by management. 
  • Daily recording of inventory and replace as necessary. 
  • Create and provide month - end close inventory reports for upper management. 
  • Establish service policies and standards within the kitchen and provide enforcement of these policies through personal example and leadership. 
  • Set up, negotiate and maintain vendor and supplier contracts and relationships. 
  • Ability to scale recipes to meet ordering demand and inventory planning.
  • Set and enforce all plating guidelines per company standards daily.
  • Ensure constancy, accuracy and taste of all meals and recipes daily. 
  • Work with management to set monthly menus 30 days min in advance. 
  • Ensure HACCP plan is in place and followed by all back of house employees.
  • Own kitchen attendance records
  • Provide financial summary and COGs reports at month-end close.
  • Maintain all necessary health permits as required by the city and state.  
  • Be open to performing additional tasks as requested by leadership. 

The duties listed above represent an outline of the responsibilities of this role. The role itself is not limited to the above and therefore requires flexibility on the part of the ideal candidate. 

QUALIFICATIONS

Work Experience Required:

Minimum of three (3) years full-service restaurant/bar experience in high volume establishments. Banquet and / or hotel experience a plus. 

Education:

College Degree from an accredited University

Knowledge Required:

• Strong professional leadership skills are essential

  • Ideal candidate must possess exceptional written and oral business communication skills. 
  • Bi-lingual a plus.
  • Experience in the creation of Requisitions, Purchase Orders, Inventory Management, Recipe Implementation and Scaling, Menu Pricing.

• Ability to train Kitchen Managers and Kitchen Leads.


Compensation Details

Compensation: Salary ($65,000.00 - $68,000.00)
