Marsanne is a Mediterranean – French upscale restaurant with open kitchen concept that is opening this Spring. This would be our third restaurant that we are opening in last 4 years. We are looking for Chef de cuisine who can lead our team and work closely with our Executive chef on opening establishment.
As a member of the culinary leadership team, this individual must be an independent worker and possess proven management skills.
In addition to technical skills, the ideal candidate must have strong interpersonal and communication skills, proficiency with Microsoft Office applications, experience being accountable for a restaurant P&L, and the desire to learn and contribute.
REQUIREMENTS:
- Minimum 3 years of experience as chef de cuisine
- Minimum 2 years of experience working in 125 seats restaurant
- Team-orientated and positive attitude
- Knowing Spanish language is a plus
- Previously opening the restaurant is a plus
The Ideal Candidate Must Be Able To:
- Work closely with and Executive chef and ownership.
- Hires, trains, develops and appraises staff effectively. Takes corrective action as necessary on a timely basis and in accordance with company policy.
- Follow recipes and team processes to ensure meeting time and quality standards.
- Manage a team of 15 – 20ppl.
- Create specials
- Ensure food safety standards are always maintained, including proper storage of all kitchen items and areas
- Follow all cleaning procedures and ensure best hygiene and personal grooming practices
- Collaborate effectively and respectfully with all team members.
- Effectively communicate with management and immediately report any equipment, food quality, and service issues.
- Conduct daily line checks to ensure highest quality of daily productions.
- Ensure that sanitation standards as set forth by NYC DOH regulations are compliant.
- Responsible for food and labor cost
- Available to work weekends, nights, and holidays as the business dictates.
- 3+ years in previous upscale restaurant as a chef de cuisine
- Manage all levels / areas of the back of house and fill a role on the line or expo as needed.
- Initiate relevant maintenance requests for repairs needed in the kitchen.
- NYC Food Protection Course Certification
